Ethel Mertz Posted February 17, 2016 Posted February 17, 2016 I'm not terribly experienced with cooking chicken, but this is what I've done: Experimental Crock Pot Chicken Recipe Put these ingredients in order into the crockpot. 1 cup of vegetable or chicken broth 1 large chopped onion 6 large carrots, chopped 1 package (frozen! yikes! I hope this works out!) boneless, skinless chicken thighs garlic powder and rosemary sprinkled over everything 1 pint size jar of pear marmalade (someone gave it to us as a gift... I'm thinking any marmalade or jam could work) - spread over chicken thighs Put crockpot on high setting for 1 hour. Turn temp down to low and cook for about 5 hours. Serve with dinner rolls, roasted potatoes, and a green vegetable. What is everyone else having? Quote
PeachyDoodle Posted February 17, 2016 Posted February 17, 2016 Sounds yummy!! I throw frozen chicken in the crock-pot all the time; it will be fine. We're having mini-frittatas with ham, cheese, and green onions, plus a spring mix salad with balsamic vinaigrette. Might throw some baked apples in there too, if I feel like it. :) 2 Quote
helena Posted February 17, 2016 Posted February 17, 2016 Sounds good! My husband is cooking tonight for my daughter's birthday. Jamaican black bean curry, collard greens, jerk chicken (vegan), yellow rice, and biscuits. Listening in because I'm in one of those funks where I feel like I can't bear to eat the same ol recipes. :) 1 Quote
Artichoke Posted February 17, 2016 Posted February 17, 2016 Tonight's a comfort food meal - meatloaf, mashed potatoes, carrots, and salad. 1 Quote
BarbecueMom Posted February 17, 2016 Posted February 17, 2016 Probably mini pizzas (I have premade sauce and naan and bags of cheese, voila) and carrots. DH has a doctor appointment that will probably run late, and I usually cook dinner for lunch these days. Lunch is leftover venison fajita bowls. 2 Quote
Miss Peregrine Posted February 17, 2016 Posted February 17, 2016 Korean Beef Satay with stir-fried vegetables. 1 Quote
MrsRobinson Posted February 17, 2016 Posted February 17, 2016 I'm in a dinner rut, myself. I am also trying to stretch the pantry and not shop til Friday. So we're having... drumroll... something with eggs!!!! I'll decide what later. These posts are giving me ideas for next week, though. :) 2 Quote
cjzimmer1 Posted February 17, 2016 Posted February 17, 2016 Well it will be stuffed shells, homemade lasagne or chicken almondine casserole. I'm making all three today so I have so freezer meals for my mom to make when she is watching my kids next week (she is not much of a cook so I always send meals when she watches the kids) and what we have will depend on what I feel like when it's time to put something in the oven. 1 Quote
Debbi in Texas Posted February 17, 2016 Posted February 17, 2016 DS is cooking something with ground beef. If it were left up to me? Ice cream. Because I need it. 2 Quote
TammyinTN Posted February 17, 2016 Posted February 17, 2016 Lettuce wrapped cheeseburgers, steamed broccoli and loaded cauliflower casserole. 1 Quote
Loowit Posted February 17, 2016 Posted February 17, 2016 I am making enchiladas with leftover roast beef for DH and I. The kids will get tacos with ground beef which they prefer. Still working on a good side dish for it. Kids are pushing for tator tots, but I would like something a bit more healthy. 1 Quote
zoobie Posted February 17, 2016 Posted February 17, 2016 I rummaged through the freezer and found cooked ground beef and onions, so that's in the Instant Pot (on slow cook) with garlic, crushed tomatoes, a Parmesan rind, and some finely shredded carrots for meat sauce. I'll cook pasta later or throw it in there maybe with some extra water. 3 Quote
Tap Posted February 17, 2016 Posted February 17, 2016 Tonight: Grilled steak, baked potatoes, salad, veggies. Last night it was shredded bbq chicken on grilled rolls. Night before: chicken pot pie soup (chicken soup, with veggies/potatos, and a cream based broth) 1 Quote
SparklyUnicorn Posted February 17, 2016 Posted February 17, 2016 I was going to make fish, but I'm deep cleaning and now my body hurts. So I'm thinking pizza. 1 Quote
HeWillSoar Posted February 17, 2016 Posted February 17, 2016 broiled fish with a sauce (mirin, soy sauce and sugar), broccoli and rice last night was chicken with lemon cream sauce, green beans and rice 1 Quote
Pink and Green Mom Posted February 17, 2016 Posted February 17, 2016 Egg roll in a bowl. I've been at co-op all day, and DS1 has baseball from 6-9, so this is fast and easy. http://www.frugalhealthylife.com/egg-roll-in-a-bowl-recipe/ 2 Quote
Jane in NC Posted February 17, 2016 Posted February 17, 2016 We're having fish tacos with a side of brown rice with Rotel and extra veg. Last night I made something I have not had in an age, Spaghetti alla Carbonara which was really good. I used Bittman's How to Cook Everything recipe, substituting Applegate turkey bacon for pancetta and adding some veg (cause that's the kind of gal I am), in this case broccoli, shallot, orange pepper. I have two wedges of Parmesan in the fridge so I went looking for a recipe that uses a lot. Carbonara also has eggs in it. Think of it as breakfast for dinner...with spaghetti. 2 Quote
Amira Posted February 17, 2016 Posted February 17, 2016 I think I'll make hummus and some kind of Yemeni flatbread and maybe shakshouka with scrambled eggs. And cucumbers and yogurt. 3 Quote
creekland Posted February 17, 2016 Posted February 17, 2016 We're getting together to play games with our neighbors again and this time all of us have opted for pizza. Really ingenious, I know, but I guess we save our brain cells for the games. If you'd asked last night then I could have said we had sauteed portabella mushrooms, a Parmesan pasta, and garden peas followed by a pomelo for dessert, but no, you had to ask about tonight... :tongue_smilie: That's ok, we'll be having fun socializing. :coolgleamA: 2 Quote

If it helps, tomorrow I'm taking soup out of the freezer and making some pillsbury biscuits! Quote
Tanaqui Posted February 17, 2016 Posted February 17, 2016 Shepherd's pie, I think. And tomorrow we're having something with chicken, and then... I dunno what we're doing Friday. Something vegetarian, most likely. 1 Quote
Guest Posted February 17, 2016 Posted February 17, 2016 Pizza. It's a church night and we are 30 miles from church, so Domino's will be cooking tonight. Quote
lexi Posted February 17, 2016 Posted February 17, 2016 Homemade spaghetti and meatballs. My kids are sick and we want some comfort food. At least most of them are eating. 1 Quote

AndyJoy Posted February 17, 2016 Posted February 17, 2016 I'm trying a new recipe of Moroccan chicken for an international family night at AWANA. I didn't have time to put it in the crock pot this morning so I baked the chicken, cooked the rest on the stove, and transferred to the crock pot to keep it warm. It's pretty tasty; I'm hoping my husband will like it so I can make it again. http://www.delish.com/cooking/recipe-ideas/recipes/a34003/moroccan-spiced-chicken-recipe-ghk0313/ 1 Quote
Alessandra Posted February 18, 2016 Posted February 18, 2016 (edited) Mjeddrah.I had to look that up, lol, sounds delicious and healthy. We had dinner at a Japanese shopping center. Then went to a shop in another town, because their bubble tea is our favorite. Our dinners are all on the go this week, because it is school vacation and we are out and about. But I did make smoked salmon eggs Benedict for breakfast recently. Edited February 18, 2016 by Alessandra 1 Quote

creekland Posted February 18, 2016 Posted February 18, 2016 Our pizza was tasty. The game playing/camaraderie fun was priceless. Now to think about dinner tonight. I have nothing planned at the moment... I might have to re-read the thread for inspiration. 1 Quote

matrips Posted February 18, 2016 Posted February 18, 2016 Our super easy chicken tortilla soup is in the crockpot. Will serve with avocado, tortilla chips and sour cream. 1 Quote
creekland Posted February 18, 2016 Posted February 18, 2016 We settled for salmon tonight - assuming it looks appetizing when I go to the store to buy it. I'll be looking around for something to go with it too - picking what looks good - probably sweet potatoes. Then we'll add kale since we have plenty in our freezer. We still have pomelos for dessert. Hubby cooks salmon, sweet potatoes, and kale, so I'm quite satisfied with what we came up with. :tongue_smilie: I can't pass on his salmon recipe (broiled) since I don't know it, but it's extremely tasty. 1 Quote
bolt. Posted February 18, 2016 Posted February 18, 2016 Hey, you guys are inspiring! I think I have a new goal to try to depart from my plain-eating rut of "meat that tastes like itself, served with 3 veggies that taste like themselves" -- in meals where the meat is plain (or nearly plain) I'm going to try to fancy up one of the veggies. I like the sound of "loaded" cauliflower, and I'm sure there are lots of things to jump off from for better side dishes. Lemon-dill carrots. Creamy corn. I can do this. 4 Quote
Tanaqui Posted February 18, 2016 Posted February 18, 2016 Yes, you can, bolt. You can do this. We're all cheering you on. 1 Quote
LucyStoner Posted February 18, 2016 Posted February 18, 2016 Last night dinner was happy hour burgers and liquor with a friend who I was taking out to thank for a favor she did for me. My husband took the boys to a more family friendly hamburger place, lol. Tonight I am thinking hash, greens, bacon and eggs. 2 Quote
Amira Posted February 18, 2016 Posted February 18, 2016 Tonight we're having tacos with either queso fundido, rajas con crema, and/or eggs. I got a tamale for everyone from the Latino grocery I tried today too. I'll make a little salsa, but not much because I only have two tomatoes. 3 Quote
Artichoke Posted February 18, 2016 Posted February 18, 2016 (edited) We're having butter chicken and farro with sautéed spinach on the side. Dd baked cookies toady, so we'll have those for dessert. Edited February 18, 2016 by Artichoke 1 Quote

4everHis Posted February 18, 2016 Posted February 18, 2016 (edited) Black bean lasagna. Layered corn tortilla, re-fried black beans, cheese and onion in a pie plate. Served with taco sauce/salsa, sour cream and choice of other toppings. Edited February 18, 2016 by connib 1 Quote
Wabi Sabi Posted February 18, 2016 Posted February 18, 2016 Last night I deep fried some panko coated chicken breasts and we dipped them in BBQ sauce. It is very rare that I fry anything at home, so it was quite the yummy treat. Tonight was dumplings (frozen), string beans (also frozen) and miso soup (homemade!) 1 Quote
bibiche Posted February 19, 2016 Posted February 19, 2016 Leftovers here. Soup, cauliflower gratin, salad and I'm calling it done. Amira, I'd rather have what you're having! 2 Quote
Ethel Mertz Posted February 19, 2016 Author Posted February 19, 2016 We had leftover soup that I had previously frozen, rosemary bread, and cheese. DS had a veggie hotdog and tater tots... and I think some carrot sticks passed his lips. Tomorrow we're having salmon, butternut squash, broccoli, and dinner rolls. By the way, the crockpot chicken thing I did in the OP turned out really well! Quote

dollhouse Posted February 19, 2016 Posted February 19, 2016 I made a pot roast, which somehow I miscalculated cooking time on and it wasn't done after being in the oven for almost 2 hours. So we are having the mashed potatoes and roasted carrots I intended to go with the roast...and Trader Joe's Bavarian Bratwursts and sauerkraut instead. Such a bummer because we don't eat meat on Fridays, so we will have to save the roast for Saturday now. Quote
