(I'd not be surprised either way about raisins, pineapples, or pecans, and would be happy to have them. Or candied ginger! But that's not exactly a standard additive. I love raisins, but not in my carrot cake. Nuts, yes. Raisins, not so much. ETA: Pineapple? Can't say I've ever had pineapple in carrot cake. Nor golden raisins. Carrot cake is probably my most-requested cake, maybe second only to vanilla cake with layers of fresh raspberry filling and vanilla buttercream. My standard carrot cake recipe includes raisins and walnuts, but no pineapple. I have only one customer who's ever asked me to leave out the nuts, and that's only because grandma can't digest them.
