I think that's what I loved about food in south Louisiana so much - every restaurant had an excellent sous chef on staff. Everything is better with a good sauce, from steak to chicken to seafood. Sometimes I think I could make a pan of caramelized onions and eat that, by itself, as a meal. And I've always wondered what it would be like to eat bacon until I actually wanted to stop, rather than stopping because I know I should. How many pieces could I eat? I've had the first thought, about the onions. Which is weird for me, since I didn't start liking onions until I was 30. Also interesting about bacon. I only cook it about once a month, because, well, because it's bad for you and I love it. White corn tortillas with cheese melted on top is my go-to pig-out snack, but I also like "complete" nachos with beans and salsa and the works! (7-layer dip, too...it can be a meal.)
