They all sound heavenly to me, but my top picks would be: Amaretto, Lemon Luscious, Valencia, Cappuccino Truffle Torte, and Frangelico. I'd pay $2 per slice for the more basic cakes, probably the lemon one, so $28 or so, and the ones with more and more rich flavors added, $30-35. I also have a list of non-cake desserts that has other things like tarts, cobblers, pies, tortes, special desserts like panna cotta, and a long list of cheesecakes. My dh freaks out about the price, but he now realizes that everything is SO rich, that tiny slices are about all one can handle. The cupcakes are so large that we have sliced one cupcake to serve four children or three adults. Err...I couldn't get it narrowed down smaller than my top 5. The Lemon would definitely be my top choice. Have you thought about adding limoncello to it? YUMMMMM. I would also pay $30 with no problem, I would probably buy 2 for a party at that price. My friend who charges $55 miniumum makes cakes that stay moist and delicious for nearly a week, and she can decorate it with anything I want if I send her a picture to work from. The bakery that charges $35 makes cakes more along the lines of your list. They're not as big as my friend's cakes, and the decor is simple, but the flavors are rich and elegant. I do have a friend who made a Tinkerbell cake for me for only $30, but it wasn't very good. The cake was dry, and we didn't like the __________ (the fancy stuff used to decorate cakes that was discussed here a few weeks ago). How many cakes could you pack in a carry-on? ;) If you were my friend IRL, I would weigh 200 lbs. At least. At this moment, I'd pay nearly any price for: lemon raspberry (ETA the one w/ raspberry & chocolate.yummm) toffee Hmm. In normal life, what I'd pay would depend entirely on how luscious they were. Anywhere from $25 for a pretty-and-tasty (for all kinds of events) to $45 for scrumptious/heavenly (for very special adult-only or small family parties). Around here though everyone sells a tiramusu and a german chocolate. I would think that making something different would be a way to establish your market, especially if you charge more than most. I personally am more tempted by the lemon, raspberry, and apple cakes. They sound more like pie and I am not much of a cake person. I also think that $40 or so sounds right. Just a cheap sheet cake at the grocery store costs $30 here. Don't forget to add in the cost of packaging and labeling as well.
