What's for dinner at your house?

Nothing especially interesting here today.

 

We have tickets for the encore showing of one of the Metropolitan Opera's broadcasts. My husband is meeting us at the movie theatre, rather than coming home for dinner. So, I just warmed up some leftover channa masala and made rice and papadam for myself and the kids.

 

I do have black beans simmering away in the slow cooker. I'm thinking either tacos or burritos for dinner tomorrow.

What is Indian Butter Chicken?

 

It's pure deliciousness is what it is! :p I use

lady's recipe, but I put mushrooms in after the chicken is cooked enough to be all white. It's so yummy. :drool: I make cumin flavored basmati rice for the side and then
lady's recipe for Gujarati roti. :drool:

 

I'm Cuban and my husband is Dominican so we eat a lot of Caribbean food, but I like variety and my husband likes rice with just about every meal so this way I can have some Indian food (which I love) and he gets his rice. :p

Everyone seems to be filling up on cheese right now. I had planned on making homemade macaroni and cheese for dinner, but there is no way I'm giving them more cheese after this. I'll switch to a plain tomato sauce and be surprised if anyone eats more than a couple bites.

Soup. I have a bunch of homemade broth in the freezer and need to use it so I can reuse the containers to make more when I pull another chicken out of the freezer. I'm going to add chicken, potatoes, carrots, celery, onions, and corn and thicken the broth with some roux.

Pizza is the theme but mine may be the funkiest of the bunch. Homemade whole wheat with a topping of ricotta, caramelized onions and chard. Recipe here. This will be served with a green salad topped with a homemade miso/ginger dressing.

 

Tomorrow I am making a vegetable soup/stew using Bob's Red Mill Veg Mix. Recipe from Sparkpeople.

We're having a roast that had been frozen, then defrosted with brown gravy mix and au jus mix sprinkled all over it... I added a cup of water to the freezer bad this morning, put it into the crock pot and 7 hours later is is smelling just wonderful! We will slice it and put it in sub sandwich rolls....

Mine probably won't help you tonight as I started it yesterday, but...

 

I used the carcass of a turkey and some bits and pieces of veg peels and tops to make broth in the crockpot yesterday, then today I strained all the solids out of the broth, added some leftover turkey, and then cleaned out the fridge & pantry: some wilty celery, half a head of cabbage, a wilty carrot, a turnip, a handful of lentils, and about a cup of rice. I also added some fresh parsley that was getting close to its end of life.

It's been cooking all day, and smells great! I might dig some bread out of the freezer to go with it, though it has rice, so maybe not....

  • 2 teaspoons prepared mustard

  • 3 bunches broccoli fresh

  • 1 cups parmesan cheese grated
  • 1 cups pecans toasted or walnuts or pine nuts

Ingredients

 

  • 3-4 boneless breasts (1 lb) or 1-1/2 lbs*
  • 1⁄2 t olive oil
  • C chopped onion
  • 1⁄2 t minced garlic
  • 1⁄2 t chili powder
  • 1⁄4 t cumin
  • 1 T lemon juice
  • 2 cans chicken broth
  • 1 C chunky style salsa
  • 1 C frozen corn
  • 1 can great northern or black beans optional-not in original recipe
  • sour cream
  • cheddar cheese grated or pepper jack

 

Directions | Numbered...

Heat oil over med in soup pot. Slice chicken in bite-sized chunks. Add to oil. Raise to high and fry 2 mins. Add onion, garlic, and seasoning, stirring, continue to cook 2 mins. Add broth, salsa, and corn. Bring to boil. Cover. Reduce. Cook 8-10 mins. Pour over crumbled chips. Top with sour cream and cheese.

* I think it is tastier if I use chicken left over from a roasted chicken or if I cook a chicken all day in a crock-pot with onions and garlic and celery.

  • 4 cloves garlic minced
  • 4 T olive oil first part
  • 4 T olive oil 2nd part
  • 2 jar (12 oz.) roasted red peppers drained, finely chopped
  • 3 cups Grilled Chicken Breast Strips
  • 1 pounds farfalle (bow-tie pasta) uncooked
  • 1 pounds feta crumbled
  • 2 tablespoons chopped fresh parsley (optional)
  • salad

 

Directions | Numbered...

COOK and stir garlic in half of the oil in skillet on medium heat 3 minutes. Add peppers, chicken breast strips and remaining oil. Cook 2 minutes or until heated through.

 

COOK pasta as directed on package; drain.

 

TOSS vegetable mixture with hot pasta and feta cheese. Sprinkle with parsley.

Dh and kiddos love it, I have to be in the mood for it and I am not in the mood. But kiddos fixed it :thumbup: so I am not complaining.

We're having chili too, but I'm thrilled. For one thing, I like it and for another, it's leftovers from last night. :D

 

Everyone here knows what Mommy's favorite food is. LEFTOVERS!! :lol:
