So...........

What do you put in your chicken salad?

My dh likes my chicken salad but I am always looking for new ideas.

I currently put in

celery

sweet relish

cilantro

mayo

olive oil

scallions (green onions)

I like hard boiled eggs in mine but he does not so those are on the side.

I don't make chicken salad. I've never learned to make chicken salad. Why do I not know how to make chicken salad? Why don't I learn? My mom never made chicken salad. Was she a bad mom? If your mom made chicken salad was she better than my mom? What are you saying exactly?

Well, that's about all I can think of to turn this into a fight. (This is obviously funny to me... hope nobody is offended... just having a goofy time!)

Anyway... I think if I DID make chicken salad, I would put in black olives... but I am not totally sure.

I don't remember where I got my recipe--I think it was Martha Stewart--but it's in my family favorites file. I love the toasted almonds.

Chicken Salad

1 medium red onion, diced

½ tsp. thyme

½ tsp. salt

2 boneless, skinless chicken breasts, cooked & shredded (or diced)

1/3 c. real mayonnaise

1 Tbs. fresh lemon juice

1 tsp. Dijon mustard

Freshly ground pepper

½ c. slivered almonds, toasted*

1 cup canned mandarin orange segments, drained & chopped

Crustless bread or pita pockets

Combine all ingredients. Makes 4 sandwiches.

*Toasted almonds – spray a baking sheet with nonstick spray. Place almonds on sheet in a single layer and broil on low until lightly browned.

Oh, you just had to bring Uncrustables into...it's on now!

I put red grapes and green olives in mine. And mayo of course. It MUST have mayo. Sometimes a touch of dill, but only when I'm in the mood.

The real point worth fighting over is this:

Real mayo or Miracle Whip?

If I bite into a chicken salad that has any sort of muscle or cartilage at all, I have to fight not getting sick. Every bit of chicken has to be filtered through my own sensitive fingertips; I can only eat chicken salad I make, and it must have grapes, & there must be watercress. So the dog in my fight is that i will not eat your children salad.

We make many variations here depending on the day I make it.

Has to have:

Chicken :) (I make tuna basically the same way)

Mayo

A small splash of cider vinegar

A very small sprinkle of sugar or drizzle of honey (to balance the vinegar tang)

Mustard (not yellow, maybe Dijon or another variety - we have many)

Sandwich Sprinkles (Penzy's) which most notably has a bit of dill in it

Salt/pepper

diced onion (any variety-we love onion so we often have 2-3 varieties around-we just pick which flavor we are going for)

then mixed in is something like:

white raisins

cran raisins

almond

walnut

apples

celery

sweet peppers

Diced sweet pickle or relish

If I am out of the above 'crunchy' items, I have used water chestnuts as a sub

Elitist.

I can't believe you would even ask that! I am outraged that you would even suggest making chicken salad with anything other than real mayo!!!

:lol::lol::lol::lol:

Well, I personally would ONLY make chicken salad with REAL mayo, but I have indeed heard of inferior beings making it with Miracle Whip.

I was going to answer everything but the chicken, but looking at your list, it would basically look like a stalk of celery.

green onions

celery

apple

grapes

golden raisins

toasted pecans or sliced almonds

mayo

curry powder

pepper

I've decided that I only like chicken salad if it's full of fruit. ;)

ETA: oh, and I only use grilled chicken...

(except when I'm lazy and pull out a jar of canned chicken)

I grew up with chicken salad that was just shredded chicken, the mayo, and relish (I think).

But, my friend makes one that is just so delicious, so I copy her now! There are chunks of chicken (white meat), the mayo, grape halves, and curry. I had not experienced the grapes or the curry in a chicken salad prior to this. It's quite yummy.

Perhaps you didn't read a long ago thread about white bread. But in that thread it is clearly stated (by ME, of course) that Miracle Whip's only purpose in this world is to be on a Thanksgiving turkey leftover sandwich (on white bread). :D
