What do you put in your chicken salad? :lol: My dh likes my chicken salad but I am always looking for new ideas. I currently put in celery sweet relish cilantro mayo olive oil scallions (green onions) I like hard boiled eggs in mine but he does not so those are on the side. I love the toasted almonds. Chicken Salad 1 medium red onion, diced ½ tsp. thyme ½ tsp. salt 2 boneless, skinless chicken breasts, cooked & shredded (or diced) 1/3 c. real mayonnaise 1 Tbs. fresh lemon juice 1 tsp. Dijon mustard Freshly ground pepper ½ c. slivered almonds, toasted* 1 cup canned mandarin orange segments, drained & chopped Crustless bread or pita pockets Combine all ingredients. Makes 4 sandwiches. *Toasted almonds – spray a baking sheet with nonstick spray. Place almonds on sheet in a single layer and broil on low until lightly browned. A local grocery makes it with onions, celery and pecans and that is yummy too although I could do without the celery. I like that raw but have an aversion to it in my food. Every bit of chicken has to be filtered through my own sensitive fingertips; I can only eat chicken salad I make, and it must have grapes, & there must be watercress. Has to have: Chicken :) (I make tuna basically the same way) Mayo A small splash of cider vinegar A very small sprinkle of sugar or drizzle of honey (to balance the vinegar tang) Mustard (not yellow, maybe Dijon or another variety - we have many) Sandwich Sprinkles (Penzy's) which most notably has a bit of dill in it Salt/pepper diced onion (any variety-we love onion so we often have 2-3 varieties around-we just pick which flavor we are going for) then mixed in is something like: white raisins cran raisins almond walnut apples celery sweet peppers Diced sweet pickle or relish If I am out of the above 'crunchy' items, I have used water chestnuts as a sub Quote Link to comment Share on other sites More sharing options...

But, my friend makes one that is just so delicious, so I copy her now! There are chunks of chicken (white meat), the mayo, grape halves, and curry.
