I wrote down every meal we have the stuff on hand for, and we'll choose whatever sounds good or works with the day's plans. We have a really busy week and one kid has the flu, so things are a bit bonkers. I don't want to go to the store unless I have to, or the coffee runs out. Tonight is Red Beans and Rice and leftover veggies (I have roasted brussel sprouts, sliced cucumbers, and carrot sticks in the fridge). After tonight, this is what I have the ingredients to cook: Baked Ziti with Beef and Green Beans (probably tomorrow) Frozen Pizza or Taquitos or Chicken Nuggets and Tater Tots (for Friday junk food night) Pork Roast Beef Stew BBQ Chicken Drumsticks Lentil Shepherd's Pie Fried Rice or Pad Thai Chicken Noodle Soup Baked Potato Soup (or just Baked Potatoes) French Onion Soup Hamburgers Chicken and Rice Risotto Honey Baked Lentils and Rice Pancakes/Eggs/Bacon/Fruit Hot Dogs/Sandwiches/Plain Spaghetti (for the haters) We probably need milk and produce mid-week, but I bought too much last week and we're still working on it. We still have a shelf of leftovers, too: one container of beef roast with mashed potatoes, one grilled hamburger, six mini-quiches, and half of a chicken pot pie. I make a lentil/broccoli quiche that is pretty good. ACK, accidentally deleted my reply. Attempt #2: I had this at a vegan restaurant a couple years ago and it was so good I decided to put it in the rotation at home. I don't have the source written on my recipe, so this may be exactly as written elsewhere or tweaked for preferences. ETA: I remember now. It's adapted from the "Mashed Potato Pie" recipe from the DK Children's Cookbook, which apparently grew legs and walked away from my bookshelves. ----------- 1/2 c. dry lentils 2 c. vegetable broth, divided 1 tsp. minced garlic 1 diced onion 1/2 c. shredded carrots 1 T. olive oil 3/4 tsp. salt (more or less, depends on your broth) 1 tsp. dried thyme 1/2 tsp. smoked paprika pepper to taste 1 T. ketchup (or tomato sauce + vinegar? I just use ketchup) 1 T. flour 4 c. mashed potatoes 1 1/2 c. chopped fresh or frozen veggies (probably thawed, I usually use whatever leftover steamed/roasted veggies we have - broccoli, cauliflower, squash, etc.) Shredded Parmesan cheese (optional for non-vegans) Preheat the oven to 400 degrees. Cook the lentils in 1 c. broth. In a skillet, saute the onion, garlic, and carrots in the olive oil. Add salt, thyme, smoked paprika, and pepper. Stir until fragrant. Add ketchup and flour. Pour remaining 1 c. broth over the top and bring to a simmer. Add the lentils and vegetables and heat through. Pour the mixture into a greased casserole dish or large pie plate. Spread the mashed potatoes on top (if using leftovers, warmed up and thinned with milk/broth/water to make spreading easier). If desired, sprinkle shredded Parmesan cheese over the potatoes. Bake for 15 minutes until heated through, then broil for a few minutes if desired to brown the potato topping. ------- The lentil/broccoli quiche sounds good, if you are willing to share that recipe too! I usually stock up on lentils when Aldi marks them down to make room for new items. For $0.49/lb, I'll be swimming in lentils for a while. We will bring something to their house but I don’t know yet what they are planning to cook. Here ya go Lentil Quiche 1 C. chopped onion (plus) 2 TBLE olive oil ½ C. dried lentils (3/4 c) 2 C. water (3 c) 2 C. broccoli florets (4 c) 1 C. chopped fresh tom (none) 4 eggs, beaten (6) 1 C. milk (1 ½ c) Ground pepper to taste 2 tsp Italian seasoning (3) ½ cup shredded cheddar cheese (1 c.) I adjust the above recipe to the amount in the parenthesis and use a larger pan Oven 375 Place onions and oil in a 9 inch deep -dish pie plate (I use a 9 X 13 deep dish stone) Bake for 15 min Lentils in water in a saucepan, bring to a boil. Cook for about 20 min. Add broccoli, cover and cook for about 5 min. Transfer lentils, broccoli, tomatoes and cheese to pan of onions and stir. In bowl, whisk eggs, milk, salt, pepper and Italian seasoning. Pour over the ingredients in pie plate. Bake for 45 min or until the center is firm. Cool before slicing. (Since I use a bigger pan, and/or maybe because it is a stone 30-35 is always enough time, even with the added ingredients) Feeds 4-6 large servings. I pulled a batch of pork green chile from my freezer, and we'll have scrambled egg and cheese burritos, smothered in green chile. FISH STICK tacos! Regular fish sticks baked until crispy, chopped up on little corn tortillas with shredded cabbage and a sriracha/lime aoili. A favorite of mine! I don't know yet for the last two nights. It brings out the flavor of the tortilla and adds immensely to the overall taco taste. My other favorite tacos are any kind of meat, well browned--chorizo, cubes of beef or chicken; I've even taken leftover bbq pork and cooked it in a pan to dry it out and make it a little brown/crispy. Place on on the browned tortillas, top with finely chopped raw onion, cilantro, salsa, and a few slices of avocado. I just copied the style from my favorite Mexican restaurant. The only thing I don't like about tacos is that it does take awhile to toast the tortillas. I usually keep toasting them at the stove until everyone else is done eating, then make a couple for myself and sit down to eat. But even doing that, it's still a very fast meal. Dumped the cabbage in a bowl and mixed up the sauce while that was going. ETA: We also put some feta on top, which I had on hand. It made a nice complement to the cabbage and fish. I don't know if I was super hungry or what, but it tasted so amazingly good. I am definitely going to remember that for the future. The only thing I don't like about tacos is that it does take awhile to toast the tortillas. I usually keep toasting them at the stove until everyone else is done eating, then make a couple for myself and sit down to eat. But even doing that, it's still a very fast meal. When we were growing up she would make them for company and stand at the stove and keep warming the corn tortillas in oil while everyone else ate. I prefer to make up a dozen or so ( I have 3 men in my house) and keep them warm in the oven. I put them on a paper towel to absorb excess oil....this way we can all eat together.
