Academy Posted November 1, 2015 Share Posted November 1, 2015 We are trying something a bit different for the next two weeks.  I found a bunch of freezer meals that can be frozen raw then go directly to the crockpot whilst still frozen.  My boys and I assembled them this weekend.  In theory we'll pull whatever we are in the mood for in the morning and put into the slow cooker on low.  Tomorrow eve is Salsa Chx, served in a rice bowl with lettuce and such.   Here is the next couple of week's list with potential sides:  Vegetable Beef Stew, likely with saltine crackers Pizza dough, served with a side salad and made into a pizza (duh) Pot Pie, stand alone or with rolls for the kiddos Orange Chx, over rice with sauteed vegetables Korean Tacos, with Cole Slaw mix in tortillas.  Fried rice to the side. Meatballs in sauce, maybe over spaghetti noodles, maybe in hoagies, veggies or salad Mushroom Barley Stew, with freshly baked bread and butter Ginger Peach Chx, same as Orange Chx  Also in the freezer for breakfasts and extras Sausage balls Granola Muffin Batter Taco Meat Burritos (thaw and eat for portable or emergency lunch)  Lunches will be leftovers, an impromptu soup, or Mexican (taco salad, quesadillas, etc.)  1 Quote Link to comment Share on other sites More sharing options...

Guest Posted November 1, 2015 Share Posted November 1, 2015 I'm slowly getting into meal planning and away from my go-to sandwiches and blah food for dinner. It's hard because DS won't eat cooked food (he will still eat sandwiches after I make him have a bite of my food) so any meal I make has to be one or maybe two servings, which cuts out all the easy crockpot meals. I don't do leftovers. I went to the thrift store and got a very small glass baking pan. So this week: Monday: Basler Melsuppe and roasted roots Tuesday: one pot chicken and potatoes Wednesday: ??? Very very busy so I don't know... Thursday: Basler Melauppe and roasted roots again Friday: One pan chicken Marsala  Slowly....very slowly figuring out this whole cooking meals thing... But things often happen to change the plan, so what we actually eat might be somewhat different than what is on my list. I have a bad habit of forgetting to defrost things, so it's not uncommon for me to call DH and say, "dinner is still in the freezer, so you'd better bring home a pizza." Sad but true. Â Today, tomorrow and Wednesday will be chosen from things I have premade in the chest freezer (kefta, black bean burgers, taco meat), grilled chicken fajitas, or tandoori-spiced chicken (can't do proper tandoori because dd is dairy-intolerant) plus veggies and coordinating starches (naan, tortillas, rice, whatever). I cannot make anything that produces leftovers! Â S--Chinese out w friends M-- T-- W-- Th--fish, dependent on what looks good at the store that day F--homemade potstickers! Â Tuesday is 'often' roast day, but I can have it another day (like Saturday, or Friday) if I feel like it. There are certain days that I am more likely to declare 'this' day or 'that' day... Monday is picnic, Wednesday I often want easy, Sunday tends to be soup-or-other. Â I have more than my fair share of personal counter-will: to the point that I resist my *own* good plans if they are too restrictive. Â To freeze muffin batter, just place paper liners into muffin tins and spray each lightly with oil. Â Pour muffin batter into the liners and place the muffin tins into the freezer for a couple of hours. Â (We placed small cutting boards in between our muffin tins while they were freezing, so we could freeze multiple batches at once.) Â After the muffins are set and fairly frozen, transfer to labeled gallon sized freezer baggies. Â Â To freeze two dozen in the same freezer baggie, just add a loose layer of plastic wrap over the first dozen then top with the second. Â Â Lay the baggie flat in the freezer to prevent the muffins from sticking to one another. Â To bake, just pop the frozen muffin cups into muffin tins and bake per original recipe. So, fast and easy it is  Tonight: a meal we call 'tea' and it freshly made bread, maybe a hard cooked egg or two, some yogurt, fruit and...tea. We have this almost every Monday  Tuesday: "bean bowls" Brown rice, refried beans, toppings as desired  Wednesday: Grilled cheese sandwiches (use up the bread from Monday) and split pea soup  Thursday: Frozen eggplant parmesan. I buy this frozen at the store and heat it up in the microwave. This is our traditional 'daddy is out of town so we can have eggplant' meal  Friday: Toad in the Hole and a salad  Saturday: Homemade pizza  Expect pretty much the same for next week...but no eggplant. I did 4 out of 7. We had a gift certificate to a local fish market, so we used that on Friday night. We had breakfast-for-dinner two nights last week, and I don't remember what happened the other night. I had a medical procedure done on Thursday that left me completely wiped out plus DH accepted a new job that day so DH and I went out to eat and the kids stayed home and ate leftovers. Friday I made the stuffed potatoes and the Italian sausage got dropped from the menu.  I'm not sure how this week will go. I'm still run down and my dad is having surgery on Monday so even if I make a plan, I will probably end up improvising at the last minute.  Having the meal plan has been very helpful even if I don't always get to follow it. I've been so drained that it's nice to not have to think about what to make most of the week. 1 Quote Link to comment Share on other sites More sharing options...

So, fast and easy it is  Tonight: a meal we call 'tea' and it freshly made bread, maybe a hard cooked egg or two, some yogurt, fruit and...tea. We have this almost every Monday  Tuesday: "bean bowls" Brown rice, refried beans, toppings as desired  Wednesday: Grilled cheese sandwiches (use up the bread from Monday) and split pea soup  Thursday: Frozen eggplant parmesan. I buy this frozen at the store and heat it up in the microwave. This is our traditional 'daddy is out of town so we can have eggplant' meal  Friday: Toad in the Hole and a salad  Saturday: Homemade pizza  Expect pretty much the same for next week...but no eggplant.  Curious what your "Toad in the Hole" recipe is. I had a medical procedure done on Thursday that left me completely wiped out plus DH accepted a new job that day so DH and I went out to eat and the kids stayed home and ate leftovers. Friday I made the stuffed potatoes and the Italian sausage got dropped from the menu.  I'm not sure how this week will go. I'm still run down and my dad is having surgery on Monday so even if I make a plan, I will probably end up improvising at the last minute.  Having the meal plan has been very helpful even if I don't always get to follow it. I've been so drained that it's nice to not have to think about what to make most of the week.  I hope you get lots of good rest so you can be better soon! :grouphug:  The bolded is true for me too. I've really slacked off on the planning for the past year and my budget has taken a beating because of it. Storygirl Posted November 8, 2015 Share Posted November 8, 2015 Today -- leftovers Monday -- roast beef with potatoes and carrots Tuesday -- cheese-stuffed meatballs Wednesday -- shredded chicken sandwiches Thursday -- chicken enchiladas Friday -- BBQ boneless pork ribs Saturday -- chicken noodle soup  We only shop once a week, and I have to plan ahead to make sure I have ingredients on hand. But things often happen to change the plan, so what we actually eat might be somewhat different than what is on my list. I have a bad habit of forgetting to defrost things, so it's not uncommon for me to call DH and say, "dinner is still in the freezer, so you'd better bring home a pizza." Sad but true.  Sunday through Tuesday, I stuck to the plan. And today.  Wednesday -- we had pizza. I think I was too tired to cook. Which is sad, because the shredded chicken sandwiches really only take ten minutes to make. It's kind of a heat and eat meal.  Thursday -- we had leftover Swiss steak from the freezer. DH accidentally pulled the dish out of the freezer and let it thaw while he was searching for something else :glare: , so we had to add it to the plan.  Friday-- I forgot to defrost the ribs (note: I mentioned in my previous post that this is a common habit of mine :wacko: ), but we had a rotisserie chicken on hand that I was planning to use for the enchiladas and noodle soup, so we ate that.    Quote Link to comment Share on other sites More sharing options...

I ended up picking up take-out for Tues due to a last minute schedule change so I moved chili to Weds and dropped corn chowder from the list. I'll add it back for next week. I tried a new recipe tonight--Tortellini with Butternut Hash; it did not go over very well.  Next week I'm planning on:  Su: pork with black beans Mo: corn chowder Tu: pizza We: red beans and rice Th: chicken/broccoli stir-fry Fr: hamburgers Sa: vegetable gumbo (another new recipe)  We did the raw to freezer to slow cooker plan described upthread.  Some of the recipes need tweaking due to personal preference, but it was an overall success!!  I am currently working on the next two week's plan, which won't be shopped for or assembled until this weekend, but let the planning commence!   Last menu's keepers that are making it onto this menu plan: Meatballs with sauce Pizza dough Vegetable beef stew Burritos Muffin Batter Granola  New recipes Salsa Verde chx Chx Fajitas Garden Vegetable Soup Sloppy Joes Stroganoff Chili with cornbread topping (All done in the slow cooker!!) Chx Pot Pie (A different recipe from last plan)  I am also considering freezing Enchilada casserole and a spaghetti sauce "starter."  I make spaghetti sauce starting with a #10 can of crushed tomatoes.  The starter would consist of the seasonings and a standard sized can of tomato sauce frozen in a quart sized freezer baggie.  The plan is to open the #10 can and pour it into the slow cooker along with the frozen "starter" and let it simmer all day, saving prep time in the am.  Breakfasts and lunches will be pulled from ingredients on hand per previous menu.  Breakfasts will likely be oats or variation, eggs, and muffins.  Lunches are leftovers, soups, Mexican or similar.
