I'm in...I'm working on a two week meal plan.  

 

TammyinVA -- I've always wanted to say how adorable those kids are!

 

Q.: How do people make meal plans. We have so many days when a full meal would be rough to put together. Other days when it's possible. It all seems to depend mainly on my mood.

 

How do you work around the mood issue?

I look at the calendar to see when activities are scheduled---dd's ballet, dd's robotics team, special competitions, dh's evening appointments or seminars (he does pro bono financial planning talks through an agency), concerts, days when we're super-busy in the afternoon...

 

I plan meals that take little or no prep for busy days (crockpot, something already prepared from the freezer, sandwiches, salad) and meals that take more time or new-to-us recipes when the days aren't as busy.

 

I plan seven dinner meals (lunches are leftovers or fend-for-yourself). I very often shift a meal from one day to another depending on how I/we feel.

Oooh, I'm in! I gave myself a membership to Relish for Christmas, so I've just really started. We were in a rut with food.

 

Sunday - chili

Monday - slow cooker baked potato soup with bread

Tuesday  - New Year's Eve so lots of finger/snack foods we don't normally eat and fruit & veggie trays

Wednesday - New Year's Day and we're attending a bowl game so junk food

Thursday - chicken tetrazzini (freezer meal made tomorrow)

Friday - mahi mahi with oven roasted veggies and rice

Saturday - garlic chicken (another freezer meal), mashed potatoes, salad

Sunday - slow cooker lasagna made with ground turkey, garlic bread, salad

 

We don't do dessert. If we feel like something sweet, I'll make something but it's not ever planned.

So this is our week's plan. I'm making an effort to eat from the freezer.

 

Sunday-- chicken cheddar chowder (Cooking Light)

Monday-- turkey seville (v old family recipe), green beans, chocolate cake (dd13's bday meal choice!)

Tuesday-- spicy wings (homemade), mozzarella sticks (Costco), raw veggies, dip (homemade) NYE special food

Wednesday-- boneless "ribs" w BBQ rub cooked in crockpot, potatoes of some sort, a veg tbd

Thursday-- chicken tortilla (Cooking Light) made w l/o turkey lol and homemade corn tortillas

Friday-- bits and pieces of seafood from the freezer: some shrimp, 2 salmon fillet pieces, 2 stuffed sole fillets (someone gave us an Omaha Steak package!), probably a big salad, maybe baked sweet potatoes to appease dd18

Saturday--- something w bone-in chicken pieces, butternut squash, something green

Sunday:  Pinto beans, collard greens, mashed potatoes, chicken, cornbread

I was planning weekly off and on last year and definitely need to get back on track.  This month I want to focus on using what is in the freezer and cut back on our grocery bills.  Next month, I'd like to find 2-4 new recipes to try adding to the mix.  I'll take a shot at monthly (because I hate doing menus weekly) but may drop back to weekly or biweekly depending on how it goes.

Great idea and inspiration for new recipes!

 

Sun = Nacho buffet

Mon = (leftover) Enchiladas, Nachos & Salad

Tues = (New Year's Eve) Appetizer buffet and Family Movie Night (Snacks)

Wed = Homemade Potato & Corn Chowder with Cornbread & Salad

Thurs = Breakfast Biscuit Sandwiches w/eggs, cheese & bacon

Fri = Pizza Night w/salad

Sat = (leftover) Soup & Sandwiches

I really need to do something like this for my family. My daughters classes run from 4pm til 6:15 every evening, meaning I don't get home until 6:30. It also means stopping for a quick bite to eat, which I cannot afford to continue doing. My DH gets home around 5:15 so if I have stuff that just needs to be put together or taken out of the crockpot he can do that.

 

Also, I do not have a working oven. I have a toaster oven, a solar oven, crockpot and Foreman Grill for cooking.

I would like to join! Looks like a great way to find some new dinner ideas. I usually plan for the week.

 

Sun: kale and chickpea soup

Mon: roast chicken, quinoa and asparagus

Tue: using leftover chicken for double stacked tortilla casserole and mixed green salad

Wed: turkey manicotti and broccoli

Thu: Cauliflower soup and salmon patties

Fri: leftover soup and spinach salad

Sat: homemade pizza for family movie night

I would like to join! I Use paprika app so will surf through for recipes and shop tomorrow. For tomorrow we have leftover Moroccan veggie stew and vegetarian pizza pockets that I made using my bread machine. They are good!

 

I will post our weekly menu when I have figured it out :)

NOOOoOooooooo! I don't want to think about it, but I really need to.

 

Our weekly breakfast schedule is always the same, so that's easy.

S - fried eggs/pastries, M - eggs, T - oatmeal/fruit, W - eggs, Th - Yogurt/fruit/granola, F - eggs, Sa - pancakes or cereal

 

Weekly lunches could use some help. Tuesdays need an easily packed, nut-free lunch.

 

Dinners need help too, though we usually have pizza on Sundays and soup on Tuesdays. Wednesday is usually baked chicken night. I'd like to add a chef salad night since everyone seems to like them.

I did this last January as part of my "No Spend" month & it really helped.  At the moment we have my dad here for the summer, so things are a bit different, but I'd still like to try to spend little & use much of what had stockpiled in the pantry & freezer to give me room to prep for our busy term 1 that begins in February.  We are also doing renovations & by the end of February my kitchen will need to be gutted to put in the new kitchen.  I will be using a makeshift kitchen set up in the garage for about 6 weeks, so will need to be really organised.  I am following the 5:2 diet, so some of our meals will be reflect that way of eating.  I drafted out a plan for the next fortnight today.

 

M 30 Dec --- BBQ (Steak, hotdogs, loaded baked potato fries, veggie platter & dip)

T 31 Dec --- Roast Chicken dinner

W 1 Jan --- Salad plates

TH 2 Jan --- Stirfry or Fried Rice

F 3 Jan --- Salad plates

Sat 4 Jan --- Picnic (Bacon Egg Pie, Beach Slaw, Tuna Mac, Pigs-in-a-Blanket, Watermelon, Apple Cake)

Sun 5 Jan --- Salad plates

M 6 Jan --- Chili-con-carne, Rice, Salad

T 7 Jan --- Salad plates

W 8 Jan --- Beef Pot Roast dinner

TH 9 Jan --- Salad plates

F 10 Jan --- Teriyaki Pork balls. Rice, Stirfry veg.

Sat 11 Jan --- Salad plates

Sun 12 Jan --- Roast Chicken dinner

***  I'll post the rest of January's menu after I finish my inventory of my freezer & pantry.

 

Breakfasts are MYO, usually porridge, eggs, toast, or cereal.  Lunches are left-overs most days.  I plan to make most of our bread products again as I'm tired of throwing out moldy bread.  Last January we had very little waste.  My garden isn't in as good shape as last year, due to lack of attention, but I aim to spend a bit more time in it this coming week.

Cheese/chicken/broccoli soup

 

Week 4

Baked veggie pasta

Chicken masala pizza

Wed - chicken stir fry w/rice (from picked chicken)

Sat- roast pork or beef (whatever is in the freezer),mashed potatoes, sw. Potatoes, turnip, carrots, pickles, rolls.

I'm in! We have a stocked deep freezer, all the meats we need, plus frozen veggies and some fruits. I need to plan though, that helps. We will still need to buy diary (cheese, yogurt, milk, cream, and butter), eggs, and produce. Also would like to buy some dry beans, I'm down to half a bag!

 

For breakfasts-

Oatmeal, pancakes, bacon, eggs, one box of cereal (kids don't usually like cereal, but I keep one box on hand for crazy mornings!), frozen strawberries, raspberries, and blackberries, frozen mixed fruit (peaches, pineapple, strawberries, mango) a big bottle of that 'green juice' by Naked, and natural protein powder for smoothies.

 

For snacks-

We have apples, cuties, oranges, blackberries, pineapple and mango, carrots, celery, cucumber, and grape tomatoes, plain Greek yogurt which I combine with a bit of cocoa or jam, cheese, hard boiled eggs, nuts, and dates.

 

For lunches-

Bag of chicken nuggets and bag of fries left over from vacation, tortillas with cheese and beans, lots of salad ingredients, I can make egg or chicken salad for sandwiches, small bags of frozen veggies, hummus, avocado and tortilla chips, left overs.

 

For dinners-

M-beef roast with carrots, celery, onion, and parsnips, cabbage salad with homemade dressing.

T-stir fry with left over beef, bag of stir fry veggies, ginger salad.

W-roasted chicken, honey carrots, Brussels sprouts, tomato and mozzarella salad.

Th-chicken chili with leftover chicken white beans, and bits of veggies, salad with homemade vinegarette dressing

F-probably grill some steak, brown rice, cabbage salad

S-pan fried chicken, broccoli, salad

S-leftovers, fend for yourself

I plan seven meals, but decide each morning based on energy level/activities/cravings what we'll have that evening.  Here's what I have for this week:

 

Roast chicken and roast vegetables, save the bones for stock

Breaded chicken breasts, mixed veggies

Black bean tostadas with fixings (black beans cook in chicken stock)

Potato skins with bacon, chives, sour cream, and salad

Roast beef sandwiches on baguette with arugula and caramelized onions, salad

Homemade pineapple pizza (Smitten Kitchen's lazy dough- best recipe ever!)

Apricot glazed salmon, sweet potatoes, green beans

I want to use up what we have in the freezer before I buy anything else and I want to really cut back on going out to eat.  Hopefully this will help. I have sides to go w/everything, too...just didn't type it all out.

Taquitos (frozen, I don't *always* have time for lunch from scratch) and quacamole

*I leave a couple of lunch days open for eating out and/or leftover days*

fruit, cheese, veggies, peanut butter, yogurt, boiled eggs, nuts, granola bars, fruit leather

Nope. The majority of our meals are very quick to make. Many of them are things the kids can do (I have teens). Many of them (especially the breakfasts) can be made ahead and reheated. I also make a lot of things in the crockpot. 

 

For example, my son (he's 12) made the scrambled eggs this morning and my 15 year old dd made lunch. 

 

If you need another way to save time, then prepping veggies ahead can save a lot of time too. But, the vast majority of the meals I make are prepared in 30 minutes or less (not including the time it is just sitting in the oven or in the crockpot). Something like lasagna is a big exception to this, but I make 2-4 lasagnas as a time and stick them in the freezer.

I'm definitely in!  We have a weird January, so some of my weeks will not be able to be planned.  Here is what I've planned so far... there are some blanks where I don't know what we are having yet so I will update when we do.

I'm gonna join. I'm working on menus today/tonight for my shopping list tomorrow. I am planning to do mostly paleo-style (though I am a little loose with it, but def  gluten-free if not totally grain free), but I'd like the inspiration!

 

One thing though - since it's just dh and I at home for the most part, I'm limiting my menu plans to supper. I keep breakfast items on hand for me, and dh doesn't bring breakfast per se. I make him salads in a jar for lunch, and send him with a couple of boiled eggs and pieces of fruit, as well as any lean meat/veggie leftovers.

 

For lunches, I tend to snack on veggies/hummus, or make omelets, or grab mediterranean food or a salad if I'm out with dd or my mom, so I'm just wanting to pin down our dinners.

I'm finally putting Plan to Eat to work - it is adding up to a lot of work. I am also starting an 8-day detox that has 4 pre and post prep days, so my meals are more complicated than usual and I still need to add meals for the family too since I don't think they want to follow all my restrictions for the detox.  I am glad that I am not putting this off to the last minute.

 

But I am working on developing a generalized month schedule - crockpot on Tues, asian/indian dishes on thursday, meatless meals 2-days a week, etc.

I've started pulling some recipes out of the dusty, hidden binder in my kitchen. I realized I'm missing a few essential ingredients which I won't get until the second week of January. I do my bulk shopping monthly, so that is when I will start.

 

I'm also starting back on my diet which is very restrictive, so the meals I prepare will be for my DH and two daughters. I'm only doing dinners, as breakfasts is usually eggs (we have a ton of chickens) or oatmeal and lunch is almost always leftovers.


I make homemade bread just about daily because my DH loves bread with dinner and I normally have fixin's for a green salad. So I figure that into our meals.

 

The first week will be:

 

Potato soup

Crockpot whole chicken with brocolli.

Beef tips over rice, mixed veggies

Chicken and pasta (one skillet dish)

Crockpot beef burgandy

The other two days will be left overs or breakfast-for-dinner (meaning eggs or pancakes).

I do breakfast/lunch/dinner, so here's what I came up with and shopped for today:

 

Tuesday

Breakfast: cereal

Lunch: spinach/pasta/chickpea soup

Dinner: homemade pizza

 

Wednesday
Breakfast: quinoa

Lunch: egg salad sandwiches

Dinner: chili, kale salad

 

Thursday

Breakfast: yogurt parfaits

Lunch: cheddar apple sandwiches

Dinner: Pork chops in mustard cream sauce, orzo & spinach

 

Friday

Breakfast: cereal

Lunch: toasted barley and veggies

Dinner: Maple glazed chicken, sweet potatoes, green beans

 

Saturday

Breakfast: granola

Lunch: quesadillas

Dinner: Spicy sausage & kale soup, bread

 

Sunday

Breakfast: eggs

Lunch: tuna sandwiches

Dinner: Baked chicken, mashed cauliflower/potatoes, roasted carrots

I tried doing monthly plans last year, but was completely unsuccessful - I cannot plan that far ahead, I just don't have it in me!

 

But, I can do weekly....  And, my mil gave me a new cookbook, http://www.amazon.com/Looneyspoons-Collection-Good-Food-Health/dp/1401941966/ref=sr_1_1?s=books&ie=UTF8&qid=1388687009&sr=1-1&keywords=looneyspoons, that looks good.  I was tired of the same recipes, so the new cookbook was very welcome!  

 

Since I'm working full-time, I've asked the kids to make one meal each week on nights they don't have anything after school.  Right now older ds is in the midst of wrestling season, so he might make a meal on the weekend, depending on tournaments, homework and work.

 

Jan 1 - BBQ Chicken Pizza (made by oldest ds) - it was yummy

Jan 2 - Roast Beef and veggies

Jan 3 - Tuna Steaks with rice and veg

Jan 4 - Shepherd's Pie

 

Jan 5 - Pork Chops with Mashed potatoes and veg

Jan 6 - Chicken Caesar Salad (will be made by younger ds)

Jan 7 - Pasta Primavera

Jan 8 - Leftovers

Jan 9 - Chicken (will be made by dd)

Jan 10 - Spaghetti with meatballs and salad

Jan 11 - BBQ Steak and potatoes

I made my meal plan for the first few days of January, but I will be working on the rest of it this weekend. Hopefully. And then I will post it. Hopefully. I plan a certain number of meals, but then we usually choose the night before (or the day of if we're running behind) what we feel like having from our list of meals.

I find that a good plan (taking in to account what time I have to cook that day) is succesful - cooking is not as hard as planning.  Once the plan is in place, I'll get it done, but if there is no plan, I panic.  I got off schedule with the holidays - i do my schedules mid-week so I dont have to fight the grocery store on the weekend.  Except today I do.  I also dont do breakfasts/lunches except special occasions.  

 

Sat (Today) french-canadian shepherds pie

Sun Turkey burgers, chips

mon pork stir fry and rice

tues hot dogs and chicken soup and biscuits

Wed Home made baked chicken strips and fries

 

then i'll be on a better schedule and MAKE myself do full weeks.  We have extensive food allergies, so there is really no possiblility of ordering food or picking it up somewhere.  I really refuse to do most activities that are at 6 or 7 pm, because . . .dinner.
