ScoutTN
We are having: Bell peppers stuffed with ground pork, rice and some veggies (mush, zucc, toms, garlic - I'm out of onions!) Something on the side, not sure what. Green salad maybe. Maybe just sliced tomatoes.
Prairie~Phlox
I just made fresh bruschetta from tomatoes & basil from our garden. We're also have lasagna that I added kale to (sauce was some I canned yesterday and the kale is fresh from the garden). I'll cook up fresh green beans too. I love this time of year. Nestof3
I don't know, and I feel bad about it. Last night, we had kebabs -- amazing actually. Chicken, zucchini, onion, tomatoes basted with Newman's Own Light Oney Mustard dressing. Cantaloupe on the side. Tonight? My son just finished baking cookies which he handed out to the guys. I ate some chunky monkey mini muffins. He also wanted yeast rolls which are rising on the table. I was planning to have short-ribs but forgot to put in crockpot. Maybe we will have salad with nuts and avocados, boys can make sandwiches, and leftover cantaloupe?

ThisIsTheDay
French dip: thinly sliced deli roast beef on buttered buns, served with a bowl of beef broth for dipping. Caesar salad: chopped romaine and Caesar dressing. Super easy and yummy dinner. I just wish the roast beef was a little less expensive. :drool5:

Jenny in Florida
We had Italian-style veggie subs. I sauteed bell peppers and onions, added chunks of baked potato and marinara sauce and served over toasted home-made sub rolls. It's not necessarily what one might call "healthy," but it is yummy.
