Meal Plan

Hit me with your meal plan. I love finding new things to cook. We are having:

1. Veg Shepherds Pie(BudgetBytes)

2. Grilled Cheese & Veg Soup

3. Pizza Quesadillas

4. Lentil Soup 

5. Egg McMuffins w Fruit(toast for me)

6. Alfredo Pasta Bake

7. Leftovers

I'd love ideas too. I'm kind of in a food rut. Here's ours for the week:

Sat: some kind of red meat (DH is in charge-he cooks those kinds of things better than I do)

Sun: we always do breakfast for dinner.

Mon: meatloaf, roasted potatoes, some kind of vegetable

Tues: cheesy chicken spinach casserole & vegetable

Wed: our vegetarian night: tostadas

Thurs: fish, rice, and a vegetable

Fri: deep dish pizza (the kids will be sad that I've "ruined" pizza-ha!)

What is your Veg Shepherds Pie recipe?  I'm on the lookout for different recipes for that.  I found one on the NYT cooking site that I really like that uses French lentils.

Our kids are all moved out now, but when they were home, we tended to mix things up a lot.  However, each week always included one night of homemade pizza, and another night of some kind of legume soup/stew -- often lentil.   Also, every Sunday night we watched a family movie and ate popcorn, cheese, and apples on the floor on a big blanket.  That was my dh's family tradition growing up and our kids always loved it.

Look at you people, starting off on the right foot! 😆 The past 5 or so weeks of holidaying have turned me off of food, lol.

This week, I will be pushing raw produce, seeded breads, basic eggs, baked lean proteins, and water, water, water.
In a way, that does sound like the right foot, but it’s really just about wanting to put in 0 kitchen effort and recovering from ridiculously dense foods.  The fridge is stocked for everyone to do their own thing.

We are only planning for 4 days at a time.

Tonight: chicken enchiladas, Spanish rice, corn, black beans

Tomorrow: lasagna, salad, bread

Monday: beef stew (beef braised in red wine, mushrooms, herbs, potatoes, carrots, onions), leftover bread and salad

Tuesday: leftovers - burrito bowls, stew over noodles, salad

We'll grocery shop/meal prep on Wednesday, plan a light meal, and then prep through the weekend to both have meals through Saturday and things in the freezer for homemade options on busy nights.

Spring rolls with crispy tofu and peanut dipping sauce

Baked black bean quesadillas

Creamy herb potato and kale stew

I’m trying to start this year off right, so am back to planning every week. I’m also having Green Chef deliveries starting this week so those will be included in my list.

Today - spaghetti and meatballs

Tomorrow- chicken fried steak, mashed potatoes, fried okra (oldest requested)

Monday - beans and cornbread

Tuesday - Mediterranean chicken w/brussel sprouts (Green Chef meal)

Wednesday - salmon w/ butternut squash and broccoli (Green Chef)

Thursday - Greek salad flatbreads (Green Chef)

Friday we will get takeout.

Today:  dh grilling steaks, asparagus, baked potatoes + salad

Sunday:  pork chops with baked rice, green beans, maybe corn

Monday: bacon, egg, cheese sandwiches and grits

Tuesday:  mushroom + Swiss burgers with onion rings

Wednesday:  enchiladas 

Thursday:  rigatoni and meatballs

Friday:  quesadillas with leftover enchilada stuff

Sun: Falafel-Waffles with Greek Salad, spicy sauce and Tzatziki 

Mon: Instant Pot tomato soup with grilled cheese sandwich

Tue: Beluga lentil salad with mango and pomegranate (got it from this board and love it!) and toasted pita bread

Wed: vegan Black eyed peas stew with rice and homemade vegan aioli

Thurs: Roasted eggplant Pan pizza

Fri: Poblano potatoes breakfast tacos

Sat: Danish Abelskeivers and vanilla yoghurt with berries

Tonight: cauliflower parm

Sunday: black bean soup & cornbread

Monday: wings and probably a frozen vegetable, maybe rice, too

Tuesday: barbecue chickpea-stuffed sweet potatoes and roasted Brussels sprouts

Wednesday: lasagna

Thursday: veggie fried rice (probably DH will put in some eggs, too)

Friday: chickpea flour broccoli omelets

Saturday: vegan Mexican (store-bought tortillas with black beans, tomatoes, corn, guacamole, a leafy green, store-bought salsa)

Sunday: winter root soup--By then it should stop feeling like spring!--and flatbreads

My last bulk cooking day I did:

enchiladas - some red some green with cream sauce

pioneer woman meatloaf - I double the recipe then make three meatloaves from that.  Her recipe is for a two pound meatloaf and that's pushing it for us even though we like the leftovers.

ravioli lasagnas - two with hot Italian sausage and two Bolognese-style

 

Next time I need to do a big batch of veggie soup, some gumbo, and some pizzas

 

Tonight I was going to make fried rice, but it's almost 8 and I'm not feeling like cooking at all.  I'm hoping everyone will fend for themselves and clear out the leftovers.

My home could benefit from a salad cleanse.  We've eaten an obscene amount of dairy lately.

We aren't doing the healthiest meals this week.  I have all the kids home, so DD is helping me cook but she is also wanting some of her favorite comfort foods because college food has been a big disappointment.

Tonight - cheeseburgers w/ homemade buns, oven fries, peach slices with cottage cheese

Tomorrow - Pulled pork, rolls or biscuits, and carrots

Monday - roasted chicken, rice, veggie of some sort

Tuesday - Tacos

Wednesday - homemade individual pizzas

Thursday - chicken burgers, chips

Friday - date night for DH and I so take-out for us and frozen pizza for the kids

Saturday - corned beef, cabbage, soda bread, colcannon

Today we had malted waffles, sausage, eggs, and mandarins for lunch. It was 72 degrees here and a big storm was moving through, so I took a break from cooking and we just had leftovers for dinner (stroganoff, spaghetti, kringle, etc.).

corned beef, buttermilk soda bread, green smoothies (I had a craving for St Patty's Day food)

chili, crackers

apple walnut oatmeal

ham, multigrain muffins, bananas

pizza, salad

chicken BLT, chips

Tomorrow I'm going to work on a 7 day menu, so I can get curbside pickup on Tuesday.

It might help you to make a master list of meals. I use it to pull ideas from but keep the original on my computer. If you have 40-60 meals in your rotation, you’re pretty set. I divide them by meat (chicken, pork, beef, seafood/fish) and vegetarian. My vegetarian is lacking.

I don't meal plan. 

NY strip and asparagus will make an appearance this week, because the steaks are defrosting as I speak (from our half a steer last year).

Other veggies we have beets, Koginut Squash, Black Futsu Squash, zuchinis, and yellow squash. Meats as usual we have beef and chicken, maybe I'll do a pot-roast this week too.

Sunday: smoked pulled pork sandwiches, baked beans, cole slaw

Monday: fajitas

Tuesday: Escarole and white bean soup

Wednesday: grilled Thai pork skewers with baby bok choy and/or broccoli rabe 

Thursday: French onion soup 

Friday: takeout for movie night 

Saturday: doner kebabs with garlic potatoes

Should have gotten some fish in there. 😬 Maybe next week.

Wed D chicken southwest salad, garlic baguettes

Thurs L cottage cheese, fresh fruit, English muffins

Thurs D lemon garlic chicken, pasta, side salad

Fri L chicken salad sandwiches, fruit cup

Fri D sloppy joes, chocolate pudding

Sat L wienies and beans, malt loaf served with honey butter

Sat D teriyaki chicken, rice or ramen, frozen Asian vegetables

Sun L doughnut muffins, sausage patties or eggs, fruit

Sun D apricot glazed chicken, baked potato, green beans

Mon L leftovers, fruit cup

Mon D tater tot casserole, veg

Tues L beef jerky, chocolate almond butter on toast, fruit cup (we have a large box of fruit cups that expire next month)

Tues D spaghetti-ohs with meatballs (making a double batch to freeze for an easy meal later)

I’ve googled and found a few of the beluga lentil salads. Which one do you use?

Also, how do you do your poblano potato tacos? I love poblano peppers so much. This sounds great.

I use the recipe from Bad Manners for the poblano potato tacos. There is a lot of swearing in there, so, please edit those parts out! I like a lot of the vegan recipes in there: https://www.badmanners.com/recipes/poblano-potato-breakfast-tacos

 

Recipe for the beluga lentil salad is the one I got from an older thread on this forum. I use the recipe exactly as written without alteration and it tastes awesome! Here is the link:

As for the lentil salad, I can’t wait to try something described as “vegan crack!” 😂
