Here’s our favorite non-fancy, uses cans recipe. 🙂

Mexican casserole

1.5-2 pounds ground beef, browned

1 can ranch style beans, drained

1 can cream of chicken soup

1 can diced green chilies 

1 can red enchilada sauce 

1/2 can water, if needed

garlic salt, onion powder, chili powder, salt and pepper (add all of these to taste)

corn tortillas

shredded cheese (cheddar/mont jack)

in a saucepan, warm all of the cans of stuff and seasonings. Add the water as needed if it’s thick. Add the cooked ground beef. 

In a 9x13 dish, layer torn corn tortillas over the bottom. Cover with half the beef mixture. Add shredded cheese over that. Do another layer of corn tortillas, rest of beef, cheese. Bake at 350 for 30-45 minutes until warm and bubbly. Can make the night before and bake the next day; just add about 15 minutes to bake time.

This is one of my faves! It's Whole 30 also (although if you don't need that, the original recipe calls for soy sauce and brown sugar in place of coconut aminos - I don't think anything else is very different). When I am doing Whole 30, I eat it over crunchy, shredded lettuce (like finely shredded romaine hearts or even iceberg), and I LOVE the little spicy drizzle, but if you're not a fan of the added fat/calories, topping with some additional fresh green onion works great! This would typically be eaten over rice, so if you aren't doing Whole 30, it's great over Jasmine rice!

It's a dry/crumbly topping, not like a wet/gravy topping, but it's REALLY yummy! I love it with some kimchi on the side!

I've also done a Thai basil beef recipe with ground meat, and it's quite yummy too! I used The Defined Dish's recipe (you can search online for it), and just used ground beef in place of the thinly sliced steak (I've done it both ways - the steak is great of course, but doing the ground beef tasted just fine, and it's cheaper). We get a lot of ground beef as well because my sister raises free-range, mostly grass-fed cattle, so even though it's not as fancy in some recipes, I know it's clean, good beef!

I like hamburger in vegetable soup.  Stuffed bell peppers are good too.  You can layer chili in a casserole pan and top with cornbread batter then bake it into a chili pie.  Meatball subs are nice and so are enchiladas made with ground beef or even homemade empanadas.  Ground beef gyros might be worth a shot:   https://www.tasteofhome.com/recipes/ground-beef-gyros/ You could make italian wedding soup with ground beef meatballs.

We like Bierocks.  I like to add onions and peppers and mushrooms to the filling.  If you don't like to make your own bread dough, feel free to substitute with the frozen stuff from the grocery store.  Sometimes I use the dough from the Artisan 5 minute recipe (It's the dough that you just mix and stick in the fridge and use later).

These can also be stuffed with any other kinda of saucy meat you like just in case you end up with extras of something else.  My one daughter loves leftover pot roast and gravy baked in hers.

 

We also really like these Greek meatballs.  The recipe came from the Plated  meal subscription but we make them all the time ourselves.  I use 2 parts of ground beef to 1 part ground lamb. I also usually use dry herbs as that's what I have on hand.

Ground beef curry is a staple here.  

Sauté onions & garlic.  Brown hamburger & drain grease.  Add curry powder, paprika, cloves, and a smidgen of cayenne, and stir.  Add water - maybe a cup or so, depending on volume.  Cook 5 minutes or so.  Add a cut-up tomato and maybe some frozen peas.  Heat through and serve.

This is a recipe my family has been making for more than 50 years. I've adapted the original to update it. It's called Enchiladas, but doesn't resemble enchiladas in any way. 

1 1/2 lbs ground beef cooked and drained. Add 3 cans undrained ranch style beans and a can of enchilada sauce. Heat until all ingredients are hot through. On a plate, stack the following: fritos, meat mixture, shredded cheese, lettuce, tomatoes, onion, corn, sour cream, and olives. My parents still eat this but without the corn, sour cream, and olives. Original recipe had us frying up corn tortillas. Mom also used fried flour toritillas. I prefer the fritos because it makes it so easy.

Between how much my kids like tacos, burgers, and meatballs on spaghetti, I cannot imagine how much ground beef you've gotten that we would not be able to tear through without new recipes.

One thing we do is mini-meatloaves. I got this idea when we used to do Hello Fresh. They have a ton of them - some have pork or other ground meats. They cook quickly with potatoes or green beans or root veggies and you just make a gravy for them. Here's a super easy one:

We also do ground beef stir fry occasionally. It comes out nice if you let some of the ground beef sort of overcook and get slightly crispy. I don't use a recipe, so I looked for one that's similar to what we do. This is similar to how I do it, though I'd use more sauce and flavorings:

I want to try this.  I love that it doesn’t have sugar as an ingredient and gives substitute suggested options for making the recipe AIP or paleo or whole30 compliant!

We would freeze most raw and some cooked, and it would get used up like that here too!  

Plus “Breakfast scramble” which involves a lot of whatever there is cooked with eggs and usually cheese. And is a dinner or lunch as often as breakfast.  

Plus we now started bitsied burger with spices over zoodles. 

We also sometimes (okay, rarely actually) have a Vietnamese style salad with beef in it.  Burger isn’t ideal for that, but will do. 

However, I’m glad of this thread.  We are expecting our CSA Meat share shortly and I plan to give that Kima a try.

This is an easy hamburger vegetable soup recipe I've had forever. My family likes it and it's really quick plus I usually have all the ingredients on hand.. You can really use whatever vegetables you want and even use frozen mixed vegetables if you're in a hurry. The potato makes it more filling. It doubles easily and freezes well. I don't know if the kitchen bouquet is necessary for flavor or if it just adds color. I've always used it but you can probably skip it.

1-1/2 lbs. hamburger
3 c. water
3 med. carrots, chopped (about 1 c.)
2 med. stalks celery, chopped (about 1 c.)
1 large potato, cut into ½ inch pieces (about 1 c.)
2 med. onions, chopped (about 1 c.)
2 t. salt
1 t. bottled brown kitchen sauce
1/4- 1/2 t. pepper
1 bay leaf
1/8 t. dried basil leaves
28 oz. canned tomatoes with liquid. I usually use diced or stewed but you can use whole tomatoes. Break them up if you do.

Cook and stir hamburger in Dutch oven or large stock pot until light brown; drain. Stir in remaining ingredients; break tomatoes with a fork if whole. Heat to boiling; reduce heat. Cover and simmer until vegetables are tender, about 20 minutes.

Picadillo is another good one. Everyone seems to have their own way of making it. I have mil's recipe that she got from a Cuban friend when they lived in Key West pre-Castro. Both of these are similar though the second one leaves out the raisins.

ETA: I just went back and clicked on links. I see a lot of us posted Korean beef bowls and some type of curry beef. You have to make at least one of those dishes since they're recommended by a number of Hive members. 🙂
