We are having-

Mon-Beef roast

Wed- Bible Study dinner (I think it's tacos this week) I will just made a side of something

Friday-Homemade Chicken Nuggets

Saturday- Fondue with stuff and also steak bites

Sunday- pot of chili

 

Both of the recipes attached my family has had before, I didn't add the peppers to the stroganoff sand.

(My parents are beef farmers, so we eat beef quite a bit, that's why there's so much on my menu, we get a quarter for Christmas every year)

Tuesday evening - All veggie soup

Wednesday evening - Some kind of fish probably with rice

Thursday evening - Asparagus quiche

Friday evening - Vegetarian spaghetti

Saturday evening - Pork roast with potatoes and a couple veggies

Sunday evening - I have no idea at the present moment as I've not done the menu that far in advance.

Monday: Pork tenderloin with a chipotle sauce, cheesy spuds bag of frozen veggie

Tuesday: Spaghetti, fetticune, with some garlic bread and salad

Wednesday: Sausage/Burgers, french fries, beans

Thursday: Pot Roast, cheesy spuds and salad

Friday: It's my birthday so we are going out somewhere tasty.

Saturday: Ranch chicken casserole with a salad

Sunday: Not sure this is dh day so probably drive-thru or delivery.

 

I do a dessert as well not sure if you wanted those but usually brownies, cupcakes, or pie. I have been craving peanut butter pie so I'm thinking I am going to make one of those for tonight.

Monday - shrimp scampi, baked potatoes, salad

Tuesday - tortellini salad (aka: pasta salad made with tortellini), fresh fruit

Wednesday - BLT & jello (100% juice + gelatin)

Thursday - Sweet & Sour Chicken, rice

Friday - Quesadillas

Saturday - Our house church has dinner together before worship. I am taking Scalloped Potatoes (aka Funeral Potatoes) and Cheesecake Cookie Bars

Whole wheat angel hair with pesto and sliced round tip steak, asparagus

Chicken enchiladas with rice and black beans, some frozen veggie of some sort

Hamburgers on the grill, carrots, maybe a simple fruit salad

For Friday, I'm hoping to go out for sushi :)

Mon: cabbage and bean soup--in the slow cooker now.

 

Tues: potato and ham casserole

 

Wed: leftovers, or pasta with pesto sauce

 

Thurs: tamale pie--coarse ground cornmeal crust filled with beans salsa topped with cheese.

 

Fri: dd and I are leaving for a weekend competition before dinner, who knows what dh will do (frozen pizza? take out from chipotle? he'll figure it out)

Hey, we're having Orange Chicken tonight too! My kids love this. I can't help but wonder if it's the same recipe, passed on by a hs blog. We'll have rice, fried broccoli, and I'm debating between homemade or frozen pot stickers.

 

Also this week:

Chicken Souvlaki with tzitziki, pita bread, and hummus

giant burritos (homemade Chipotle)

ham, baked corn, mashed potatoes

Mon - leftover beef stew from Sunday.

Tues - stir fry with lots of fresh veggies, with shrimp from the freezer I need to use up.

 

Wed etc - no idea. That I KNOW what I am making TOMORROW is a big deal! ;)

 

I have plenty of chicken, pork, Italian sausage and beef in the freezer, and heaps of pasta/rice/taters. Wed. morning I will thaw something or decide on pasta - I rarely plain an entire week at a time. If I see a roast or large chicken at a good price then I know we will have roast, leftover roast, then burritos or hash for the next few nights. A large pot of soup of stew or chili is good for two nights in a row. I try to have one of those plastic-bagged ham slices handy for a quick meal, also cans of salmon for patties and buckwheat for kasha. So unless I see that large lump of meat on sale, most of our dinners are based on stuff I already have at home.

Our house just went on the market last week, so w/ random showings (usually over dinner time) menu is subject to change, and freezer/slow-cooker oriented- LOL

 

Monday: Chicken Cordon Bleu, pureed cauliflower & roasted carrots

Tuesday: (Crockpot) Black beans over rice & spinach salad

Wednesday: Enchiladas w/ broccoli & cauliflower

Thursday: Honey mustard curry glazed chicken breasts, brown rice & steamed veggies

Friday: (Crockpot) Chicken Taco Soup

Sweet potato and apple casserole ( http://allrecipes.com/Recipe/Sweet-Potato-and-Apple-Casserole/Detail.aspx ). We found the recipe a couple of Thanksgivings ago because we were all bored with sweet potatoes with marshmallows. It is really good, and sweet, so it isn't a normal side, but every once in awhile it is worth it!

Thursday - Crockpot Beef Stroganoff over noodles

Friday - Baked Sweet Potato bar

sides are cooked/steamed veggies and/or canned fruit on hand

Saturday + Sunday are dh's domain, I'm off!

Here's our current list

 

Saturday - Turkey Chili, cornbread and salad

Sunday - Chicken Parmesan, green beans, garlic bread and salad

Monday - Roasted Chicken, mashed potatoes, peas and salad

Tuesday - Chicken Enchiladas (using leftover chicken from night before) and Salad

Wednesday - Orange Chicken (using this recipe except I don't fry the chicken - I just chop it up and brown it, then make the sauce) Brown rice

Thursday - Pasta with Roasted Red Pepper Cream Sauce and Salad

Friday - Hubby's birthday so we will go out to eat

Saturday - Homemade pizza and Salad

Sunday - Pork Roast, Sweet potatoes and green beans

Monday - Cream Cheese Chicken in the crockpot with brown rice and a salad.

Last night we had guests for dinner and I served New Orleans-style barbecued shrimp, French bread to dip in the sauce, a raw veggie platter, and build-your-own crepes for dessert. It was divine, but it took my fancy-cooking energy for the week. ;)

 

For the rest of the week we're having:

- Ham & biscuits

- Spaghetti marinara with Italian turkey sausage and zucchini

- Roast pork tenderloin crusted with garlic and rosemary

- Tilapia with soy-ginger sauce

- Some kind of thing involving boneless, skinless chicken breasts - I haven't decided

- Dinner out at Outback Steakhouse

In no real order:

 

-Roast chicken w/acorn squash

-Spaghetti w/meat sauce

-Salmon patties w/ broccoli or roasted asparagus

-Some sort of chicken-broth based soup after finishing off the roast chicken and making stock, not sure what kind of soup yet.

-One egg-based dinner (frittata? eggs baked in marinara? something else?) but once again, haven't really thought too specifically that far ahead.

-At least one leftover night

my menus run from Saturday through Sunday and are for 2-weeks. I also assign certain days for certain types of meals:

 

Saturday (easy) - Cheese quesadillas

Sunday (meat) - Gluten free tempura chicken and veggies (broccoli, red pepper, green onions, sweet potato and zucchini) with GF birthday cake and homemade ice cream

Monday (pasta) - fettucine alfredo and spinach

Tuesday (soup) - Loaded potato soup

Wednesday (leftovers) - Leftovers**

Thursday (beans) - Lentil Stew

Friday (grains) - Quinoa with shredded sweet potatoes and veggies

 

Saturday (easy) - I am hoping that we will go to the Cove for dinner

Sunday (meat) - cold cuts and cheese with fig and almond cake

Monday (pasta) - pumpkin ginger pasta stirfry

Tuesday (soup) - Veggie noodle soup

Wednesday (leftovers) - Leftovers**

Thursday (beans) - Chaana Masala, Indian Eggplant, Rice and maybe some other Indian Take-away

Friday - Coconut rice with Asain veggies.

 

** if we don't have any leftovers, then something easy like eggs.

 

We also have a perpetual breakfast and lunch menu:

Tuesday-Steak, asparagus, potatoes, green salad.

 

Wednesday-Sweet potato tortilla pie with apple-chipotle salsa, kale, beans, green salad.

 

Thursday-BBQ Pork or beef (depending on what's on sale) on wheat buns, beans, lime-cumin coleslaw, green salad.

 

Friday and Saturday-I don't know because I will be away for the weekend! (Probably leftovers and pizza. And green salad.)

 

Sunday-Roast chicken, fresh bread, green salad, roast carrots.

Sunday: chili and green salad

Monday: chx salad melts, fruit

Tuesday: sweet mexican beef in the crock pot (chuck roast or brisket with cranberry sauce and chilies in adobe)

Wednesday - dinner at church - Asian, pork I think.

Thursday - catfish, rice and broc

Friday - chicken - not sure how exactly.

Saturday - Dh is on that night, I'll be out all day until after kids go to bed.

Probably soup and sandwiches or pizza.

We are going out tonight for a quick family dinner.

 

Tomorrow is errand day. Dinner will either be this excellent roast chicken or super quick intant type meal, depending upon when we start and finish.

 

I'm hoping Wednesday to make a simple but yummy Indian meal from one of my new cookbooks. I cannot WAIT to try this book and any cookbook that comes with an entire box of exotic spices has got to be fun!! :D

 

Thursday, we're making an Irish stew. And that's as far as I can go! DH will be off Friday, Saturday, and Sunday so it will be a lot of meals out which gives me lots of time to plan for the next stretch we won't have him for meals. :001_smile:

How do you cook the Swiss chard?

 

Would you share the sweet potato tortilla pie recipe please?

 

The Swiss chard:

Wash the greens, leaving them slightly damp. Saute a little garlic in olive oil, then add the damp greens, stirring to coat with a little oil. Put the lid on the pot/pan and let cook until wilted and tender(about 3 min.), stirring a couple times. Take off the lid and let the liquid evaporate, about 1 min. Serve immediately.

 

We also cook spinach this way. You can add raisins or chopped dried cherries, and/or toasted pine nuts or chopped pecans/filberts/almonds with the greens if you choose.

 

Sweet Potato Tortilla Pie

(original recipe is from Vegetarian Planet)

 

Cube 2-3 sweet potatoes. Toss in olive oil and minced garlic and cumin. Bake for ~20 min at 425 until potatoes are just tender. Let cool. I often have more cubed potato than I need for the pie, but I love sweet potatoes, so I eat them for lunch the next day.

 

Mix:

1-1/2 cups milk

3 eggs

Salt & pepper

 

Butter a pie plate. Layer 4-5 corn tortillas in the pie plate, overlapping, to form the "crust". Put the cubed cooked sweet potatoes on top of the tortillas. Sprinkle ~3/4-1 cup cheese over the potatoes. (I use a combo--jack or pepper jack and cheddar.) Pour the milk/egg mixture over the top. It's ok if it runs under the tortilla. Bake at 375 for 40-50 minutes, until the custard is set. Serve with salsa and sour cream.

 

You can make this basic recipe with just about anything you'd put into a quiche. We like yellow potatoes and diced bacon with cheddar, swiss or goat cheese and no cumin (maybe add a touch of nutmeg). Sometimes I make one of each--A spicy sweet potato version with pepper jack cheese and a milder yellow potato and cheddar version--then we have the leftovers for leftover night or breakfast.

Yesterday -- chicken in cashew sauce (my 6yo absolutely loved this and asked if we could have it again tonight -- unfortunately, I was out of the ingredients for it.)

Tonight -- broccoli-cheese soup (also a hit with the kids).

Tomorrow -- either beef stew or curried chickpeas; the other will probably be for Thursday.

Weekend -- probably orange pork or beef (depending on which is in the freezer in the right quantity, as we'll have company), and we might go out/order in once.

 

I created a three-week menu rotation for late winter/early spring, and I think that will serve me very well.

Saturday: Eat Out

Sunday: Boneless Pork Chops, baby potatoes, fruit or salad and bread

Monday: Lasagna w/ fruit or salad and bread

Tuesday: Leftover Lasagna w/ fruit or salad and bread
