Wyndie
Ugh. I told myself I wouldn't get involved in controversial threads but this one just makes me squawk!! I don't DO chicken salad. :D

Melinda
If I bite into a chicken salad that has any sort of muscle or cartilage at all, I have to fight not getting sick. Every bit of chicken has to be filtered through my own sensitive fingertips; I can only eat chicken salad I make, and it must have grapes, & there must be watercress. So the dog in my fight is that i will not eat your children salad. I won't eat children salad, either. Chicken salad on the other hand...I like it with chopped up grapes or craisins, toasted almonds, real mayo (Hellman's all the way), celery, and a little heavy cream whipped into the mayonnaise. DianeW88
I prefer tuna salad ;) with miracle whip, raisins, and a slice of American cheese in a sandwich. :ack2: Tuna is cat food. Can. not. eat. it. However, that may have something to do with my lifelong shellfish allergy. My mother brought NO fish into our house. Just in case the tuna in the can was cozy with a lobster or crab at some point during its existence. :D And, we all know "miracle whip" and "American cheese" are dirty words.
*********
I use leftover rotiserrie chicken; gives the salad a good flavor. I add: toasted slivered almonds halved green and red grapes mayo salt My dh and I LOVE it.

chickenpatty
Dukes Mayonnaise. No other brands will cut it. And especially not that yucky stuff called Miracle Whip. (And you can tell my hubby I said so!) :tongue_smilie:
thescrappyhomeschooler
What about diced red peppers? Why is everyone discriminating against them? They are delicious in chicken salad. Stop being judgmental, people, and try some red peppers! :D
AndyJoy
My favorite is mayo, red grapes, onion, celery, apple, and almonds.
Tylianna
If you don't add red onions, you cannot call it chicken salad. Period. I figured if you didn't put CHICKEN in it, it couldn't be called chicken salad... You learn something new, every day. ;)
Denisemomof4
this is ridiculous. Why do you want to cause trouble like this? You need to find better things to do to occupy your time. RoughCollie
All I have to say is that I don't eat or make chicken salad, and I don't eat or make it with Miracle Whip.
mcconnellboys
How dare you add something so elitist as cilantro to a working class chicken salad? <')))~ (That's an armadillo, by the way.... Caitilin
I make mine with curried mayo, raisins/grapes/craisins, apples, celery, red peppers if I can find 'em, almonds/pecans, sometimes some onion, and serve it on croissants. Anything other than croissants is HERESY! :D

sarahj
NO Miracle Whip and NO olives :ack2: Most other things are welcome in my chicken salad, especially grapes and curry powder. I don't think I've made the same exact chicken salad recipe more than once. I like to change it up each time.
Audrey
My dh likes my curried chicken salad, which adds curry powder to the mayo, plus chopped celery, shredded carrot, some raisins and some toasted slivered almonds. I prefer my spicy Asian inspired chicken salad, which adds a splach of Sriracha and a dash of 5 spice to the mayo, plus chopped water chestnuts and green onions, and topped with a sprinkle of chopped toasted cashews. jenn-
You guys make some fancy chicken salads. On a make it fast day mine includes chicken from a can, mayo (the real stuff), and dill relish. If I am being fancy garlic powder, onion powder, and crushed rosemary go into the mix (especially if using the canned chicken instead of leftover chicken). Three things that are not allowed in my chicken salad are grapes, celery, or onion.

cin
I forgot to mention the necessary Tony Chachere's seasoning. Anything else is inferior. You may as well feed your family Uncrustables. Hey now, your stepping on MY toes. We bought 2 boxes of those and frozen corn dogs for Christmas Break :) If they get a break, so do I! It sounds like there are some almost healthy chicken salads out there. Grapes, pecans, almonds, a touch of oil. Yummy!
ScoutTN
for my kids whatever cooked chx I have mayo celery, chopped fine green onions, chopped fine celery seed - this is crucial! a dash of lemon pepper for my DH white meat chx - I usually roast bone-in, skin-on breasts and use that mayo apples celery walnuts or pecans celery seed raisins or grapes I like both ways! NO miracle whip! definitely no olives - blech! Audrey's Asian inspired will be on my list for this weekend! DH will love that I think! He hates food without zing and is addicted to Sriracha (and Wasabi!) Edited January 13, 2011 by ScoutTN

Amy in NH
Well, I had a different kind of chicken salad in my head when I read the title, so here it is: Romaine (or Spring Mix) Spinach Shredded Carrots Shredded Cheese Cucumber Tomato Diced Apples Olives Celery Mushrooms Croutons Pepitas (Hulled Pumpkin Seeds) Sunflower Seeds Dice Cooked Chicken and place on top. Add whatever salad dressing you like.
thescrappyhomeschooler
Thank goodness I had some leftover roasted chicken in the fridge! I had to make myself a chicken salad sandwich for dinner. Here's what I put in it: Chicken :D Celery Green onions Red Pepper Carrots Mayo (Real, not M.W.) Dijon Mustard Salt Pepper Little bit of dill pickle juice I ate it on rye bread with sliced tomatoes and green leaf lettuce. Yummy!

TXMomof4
Mayo Lemon Juice celery pepper Urban legend is that this is the Neimann Marcus cafe recipe and I love it! Of course, if I HAVE to I go with pecans and craisins.
Mynyel
I do mayo, mustard, celery, vidalia (or Maui) onion, granny smith apple and cranberries. Oh, I forgot the fighting part- I want no part of your obviously socialist chicken salad. You so crack me up! ETA: As soon as I can get off my hill (blasted ice) I am going to make some chicken salad! OK after my cooking/cleaning boycott!
Once Again
The comments on this thread are upsetting. I don't know if I can continue coming to this board knowing that you people put mayo in your chicken salad. Softened cream cheese is the only way to go. You should all be ashamed of yourselves. :glare:
