Tracy,

Bake your sweet potatoes. If you like them fluffy (like Idaho white potatoes) then soak them for a few hours in salted water. Don't know why it works, but it does.

Our week--

Chili/cornbread

pasta salad (rotini, Italian dressing, grape tomatoes, mozzerella cheese cubes, mushrooms, black olives, gr peppers, cukes)

Pizza (from the box)

hamburgers and tator tots

salmon, wild rice, salad

smokey po (onions, peppers stirfried soft, boiled potatoes and lean smoked sausage, all combined)

"big" chicken (roasted chicken with sides of some sort)

Here is mine. I'm trying to get more faithful at this as I have taken some time off. Thanks for the encouragement.

Monday - leftover Vietnamese Chicken

Tuesday - Lamb patties and mashed potatoes

Wed. - dinner out at church

Thursday - Beef stew in the crockpot with curried veggies

Friday - Chicken teriyaki

Saturday - Spagetti

We are on a tight budget these next two weeks so I am over compensating buy bring out all the nice cuts of meat from my freezer. :tongue_smilie: Dosen't make sense I know but it feels a little better to not have complaining kids. They love most of these meals. I'll give them lentil soup next month when the money is not so hard to stretch.:001_huh:

Each Sunday we have youth and my dc's come home starving. They are so wired it seems like they never will go to sleep. Monday morning is a mess to get started and their moods are horrible. I'm really getting fed up.:glare:

Since my dh is a pastor, I don't really want to stop them from youth. I also feel this is important but I can't stand starting out my Mondays like this. I feel like we need a weekend to overcome our weekend, IYKWIM.

Does anyone have any thoughts or ideas about things that have worked at your house? Anything from food that doesn't keep them up to starting later on Mondays? Anyone else have the Monday blahs:confused:

Since our kitchen is currently gutted and I only have a grill, one side burner and a crockpot to cook with, I'm somewhat limited in my choices. Here's what's on the plate for us:

Monday-meatloaf, mashed potatoes, carrots

Tuesday-black bean soup

Wednesday-Mu Shu chicken wraps

Thursday-Veggie fajitas

Friday-African peanut & veggie soup

We're in super-busy crisis mode, as I get several projects off the ground, including the school year. So I wrote out 6 weeks of super easy, super boring menus (1 plan times 6 weeks.) It is:

Tacos

Spaghetti

Baked rotini

Chicken pot pie

Pizza

Church group (we eat there every other week) or sloppy joes

Sunday dinner (TBD each week depending on hosting people or eating elsewhere)

I bought it all for six weeks and cooked up the spaghetti sauce to freeze, as well as the cut-up chicken for tacos and meat for sloppy joes. Then I divided up everything else and froze it or stocked it in the pantry. I just need to add fresh veggies each week. It will be boring and possibly bland, but it will be better than nothing. :)

I work Thurs, Fri, & Sat evenings so those nights tend to be stuff that's real easy. And let me just add the disclaimer for all my fellow moms with kids that are picky eaters: this is what I cook, it doesn't necessarily mean the kids eat it all

Monday- Tacos, spanish rice and homemade refried beans

Tuesday- Lemon Rosemary Crockpot Chicken with roasted white potoatoes, carrots and onions

Wednesday-Pesto spinach chicken with alfredo rotini and grilled zuchini (gotta love the George Forman)

Thursday-Spaghetti and meatballs, mixed veggies and garlic bread

Friday-Pizza or leftovers

Saturday- Easy chicken parmesan and broccoli w/cheese

Sunday-Crockpot roast w/potatoes, onions and carrots and shells & cheese
