klmama
I need to provide a main dish for a meeting that will have about 20 people at it. Others will be bringing salad, drinks, and dessert. This is a monthly meeting, and I think they get a lot of lasagna and spaghetti; I'd like to bring something different that won't break the bank. Maybe baked chicken thighs? Any other/cheaper ideas? Edited January 16, 2018 by klmama
mmasc
I’d go with shredded pork or shredded chicken, with buns or rolls. Goes a long way; tastes great with the sides you mentioned. :)
Bambam
Potato soup? Doesn't really go with salad but is tasty on a cold day. Broccoli cheddar soup?
KatieJ
Italian beef sandwiches, Chicken tetrazzini Chicken divan with a layer of rice under the chicken.
prairiewindmomma
One soup & one chili?
teachermom2834
Shredded pork can feed a crowd easily. Provide rolls but people can eat without one if they choose. You can make it plain and offer a couple different sauces to accommodate different tastes. Easy to transport and keep at temp in a crock pot. KungFuPanda
Curried chicken and rice? Or a Thai coconut curry with potatoes?
Carol in Cal.
I'd go with a filling soup. Probably Wild Rice Soup, which is fantastic. Or if money were no object I'd go with Tri Tip.
JanetC
Chili can be less break-the-bank than shredded chicken. Make the meat go further by adding more beans, onions, etc faster than you add more meat. So maybe triple all the veggies but only double the meat. The rest of the ingredients are pretty cheap. AnnE-girl
Shredded bbq chicken or pork in the crockpot go pretty far and are fairly inexpensive. I like serving them with slider rolls.
ktgrok
Chili or shredded pork or chicken. Chicken thighs are always a good buy at Walmart.

gardenmom5
pastictio. it's basically a greek lasange - but the spices are very different, and it has bechamel sauce on top. you can double it. I use regular macaroni - just slightly less than called for. yummy.

whitestavern
Chile? You could do a standard beef chili or a white chicken chili with thighs. Pot pie? You could make a big one in a lasagne pan... just need to roll the dough different. Beef stew/chicken stew? A tray of sausage and peppers/onions (could also add potatoes to stretch further) Edited January 17, 2018 by whitestavern

Bootsie
I would do chicken tortilla soup, gumbo, jambalaya, king ranch chicken, or some type of mexican flavored casserole.
