displace
Turkey cranberry squash bowls/?casserole? I made this with acorn squash but I think I'd like it better with butternut squash: https://www.google.com/amp/www.laaloosh.com/2013/11/26/ground-turkey-stuffed-acorn-squash-recipe/amp/ I saw a Mac and cheese recipe and it got me thinking. Garam masala ? I usually just eat it roasted and salted with sweet potato and onion. If you want to get super seeet you can put some apple butter on the vegetables before oven roasting (and oil), and it's awesome.
Sneezyone
We like it roasted with EVOO, thyme, salt and pepper. I use the leftover cubes in a salad with grilled eggplant, tomato, capers and feta. I've also used it to make fresh ravioli with a browned butter/pesto sauce. Yum!

Anne
I'm making a chicken-butternut squash kale soup for dinner tonight. It's a new recipe for me, so we'll see - but it sounds good! Also saw a recipe for curried butternut squash soup that I printed off and will try next week. Anne
Carrie12345
I don't really use a measured recipe, but... Use a mandolin to slice thin. Layer squash, sliced onions, cheddar cheese, and "cream" (I just use milk) and some s&p. Bake Squash au gratin! (My kids hate it. They're insane.)
Cinder
Someone else already typed it out, so I'm just linking: Corn Lover's Stew My version isn't vegan since I usually use chicken broth instead of veg broth.

Χάων
A half pie is a pasty? Yes. When DS was little he gave it that name and it stuck. I used to make quarter pies as well, but now he is a teenager and I am not going to bother with that much work for something that will be gone before I blink.
