So far, I have made: Ham and macaroni and cheese Ham and sweet potato casserole Ham and melted swiss sandwiches with chickfila sauce Bisquick sandwiches with ham and cheddar I'll make split pea soup when we get down to the bone, but I still have half a ham left. I used to surprise mine with green eggs and ham for breakfast. Use blue coloring to turn the yellow eggs green. I just cut up the ham with onions, apples, carrots (and possible potatoes?) and cooked it in a white sauce. I used sage, but rosemary would also work. I only used a top crust for the pastry. And cheesy potato ham soup would probably go over a lot better than split pea, though my husband may be disappointed since he loves pea. Thank you! samba Posted April 6, 2016 Share Posted April 6, 2016 I would slice and freeze in small portions. You could also do ham/egg or ham/egg/cheese breakfast sandwiches. We like them with English muffins. umsami Posted April 6, 2016 Share Posted April 6, 2016 Man, back in the day my family could easily go through a Honeybaked ham with no problem.... just eating sandwiches. Yum. (Excuse me for a Muslim convert nostalgic moment of missing pork.) Second the ham salad recommendation as well as ham fried rice. My grandma used to grind the ham in a meat grinder for ham salad, but I bet a food processor or sharp knife would work well, too. Had a friend from Saipan (near Guam) and she used to make the best spam fried rice. The key was adding a ton of soy sauce and black pepper to beaten eggs....and then adding that at the end.... and stirring the eggs into the rice, carrots, onion, spam/ham mixture. You didn't want separate bits of egg, rather it would kind of glue it all together. AndyJoy Posted April 6, 2016 Share Posted April 6, 2016 I'm using up the rest of ours to make egg casserole to cut up and eat for quick breakfasts: 1 dozen eggs 1/4 cup milk 2 cups cheese 1 lb ham or sausage diced green onions 1 tsp mustard powder 1/8 tsp pepper Whisk eggs, milk, mustard, then add the rest. My son cooks one meal a week and he made this tonight. I'm on a diet so I was only going to have a small bite. Oh, it was so good. I ate a whole bowl of it.
