My favorite is chocolate chess with fresh whipped cream on top, and dh likes peanut butter pie.....fresh vanilla custard over a peanut butter base and meringue on top. Yay! However, I've yet to find a coconut flour that's not cross-contaminated with one of this other (many) allergens. I'm on my phone but I think I've got a decent coconut flour crust recipe on my laptop. If I find it I'll come back and post. I do one with almond flour, coconut, coconut oil, spices and coconut palm sugar. It's pretty yummy but not much help for the nut-free crowd. I haven't tried it, mind you, but everything else from the book comes out perfect. The flour is rice, tapioca, xanthan gum, and potato starch. I'll look it up, if you like.
