Whole wheat flour can be finicky. It depends on the kind, the age, etc as to how much liquid needs to be added. Much more so than white flour IMO. King Arthur white wheat may work for you. I've read varying things about whether "whole wheat" flour is any "healthier" than white, so sometimes I don't even bother. Especially with pizza. :) Mel's Kitchen Cafe has a whole wheat pizza crust I've made successfully, but the liquid/flour ratio always needs to be tweaked based on humidity and the flour.
I love my pizza stone and keep it in the oven most of the time, so it doesn't take up storage space. If I need to make more than fits on it, I preheat a sheet pan and flip it over to bake the crust on the bottom. I also usually dock the crust and parbake it for a few minutes to set up before adding sauce and toppings. This makes a big difference in a home oven to not having a gooey crust.
I'm jealous. I'm also VLC and would lurve to eat all of the carbs. ALL OF THE CARBS.

I love New Orleans too. You can fly right into there (and get around without a car) whereas you'd have to rent a car for Charleston.

What kind of flour? A soft wheat like White Lily is best for biscuits. Regular hard wheat flour makes crumblier biscuits. Could also be not enough moisture--did you work a lot of flour into the dough when you rolled them out? Did you overwork it?
There are some local non-chain places that get much better reviews for that style of chili. It's been several years, so I don't remember from my research which they are. We didn't like it enough to replicate at home, but it was a fun, "local" meal. :)

The Reds ballpark is a nice place to see a baseball game.
Might be better with pork, but traditional BBQ sides are coleslaw (cabbage, carrots, in a mayo-ish dressing with ground celery seeds), macaroni and cheese, baked beans, collard greens, tater tots or fries, or potato salad.
They make special butt cushions. A neck pillow would be way too high and not shaped correctly unless you have a super tiny butt. Ours are about the size of my 5 year old's seat!
The zoo is free. The extras (train, carousel, etc.) are not.
The Budweiser tour was really interesting and free. You get to see the Clydesdales and Dalmatians. There are free samples at the end with nonalcoholic options.
There are some less ugly Crocs than the original clogs. The flip flops are pretty comfortable. My mother has switched to those from the Orthaheels for her plantar fasciitis. I hate wearing shoes myself, and wear Birkenstock Gizeh sandals as much as humanly possible. I tell myself they are cuter than some Birks. ;)
If there's equity in the house, I would tap that first. No tax implications on a HELOC or similar. Find out what you'll get dinged in taxes and penalties from withdrawing from investment accounts.
