Ok, just came back from whole foods - they were still out of turkey thigh, which is what I use for burgers.  but there was a big family pack of chicken legs for $3.  So i need a meal for tomorrow - and really, they dont like chicken legs.  I'm thinking of pressure cooking them and shredding and doing bbq or salad sandwiches . . . i'd rather make chicken and dumplings, but dh kinda hates that and I think I already did it last month, so i really should wait another month . . .

Ok, just came back from whole foods - they were still out of turkey thigh, which is what I use for burgers.  but there was a big family pack of chicken legs for $3.  So i need a meal for tomorrow - and really, they dont like chicken legs.  I'm thinking of pressure cooking them and shredding and doing bbq or salad sandwiches . . . i'd rather make chicken and dumplings, but dh kinda hates that and I think I already did it last month, so i really should wait another month . . . 

 

My kids hate legs, so I like your idea of shredding them and covering them up with a dark liquid to disguise the color of the meat. :) You could always use the slow cooker, too. BBQ-chicken sandwiches sound great!

I did it in the PC, which i'm in love with, and i actually found when i was looking to replace my slow cooker (the non-stick surface was peeling off . . . eww).  It has a slow cooker setting, but I think EVERYTHING has come out better in the PC than it did in the slow cooker.  The meat was very tender - maybe a tad more cooked than I wanted it, but close enough.  It'll make an easy meal tomorrow.

Ok, just came up with menu for the next week!  (no idea why it copied my doc's font or how to undo it)  also, there are veggies - some are part of the recipe and others i'll figure out at the store

 

1.      r- turkey burgers

2.    f - baked salmon / Cuban black beans and rice

3.    st - spag (need sauce)

4.    sn - turkey breast

5.    m - tacos (need beans)

6.    t - asian chicken breasts / rice noodles

7.    w - salmon patties / fried tofu

 

The rest of the family likes salmon, but i think i've developed an allergy.  So i make them salmon and something else for me - tho teen and dh will likely have some black beans.

Sorry if this is inappropriate, but I just made cuban black beans for the first time - i followed this recipe almost exactly, except I used a little red wine i had in the fridge and a little sherry, and I added 2 chorizo . . . it was SOOO yummy!  Teen ate a bowl but wont eat the leftovers.  Dh had two servings, even tho he actually had salmon which he'd requested lol

S: Black bean and butternut squash enchiladas

M: Rigatoni with a butternut squash sauce and a spinach salad

T&W: Turkey burritos should make enough for leftovers the next night when we need to be out of the house by 5.

T: Veggie korma with lime cilantro cauliflower rice

F: probably some sort of soup using up the bits of leftover veggies in the fridge

S: Homemade pizza

S: Roasted chicken with ????

 

Breakfast is generally cottage cheese oat pancakes or I have an egg white omelette and steel cut oats with chia, flax, and some berries or applesauce mixed in.

 

Lunch will be a combination of leftovers and some asparagus soup for days I don't have enough leftovers for all of us.

Okay, this week is a little different because youngest gets to pick the menu but it's still all made at home. Big sis is out of town for most of the week and youngest gets all her favorites. Friday is big sister's choice because she gets back home that day.

 

Monday - chicken fried steak, mashed potatoes, gravy, broccoli

Tuesday - egg rolls and fried rice

Wednesday - baked ziti

Thursday - ham, mashed potatoes (yes, again), peas

Friday - mahi, oven roasted veggies, rice

Saturday - chicken nuggets, mac n cheese, salad

M: chicken roasted w onions and potatoes, something green, mashed butternut squash

 

T: meatball soup (made with ground turkey and oodles of veggies)

 

W: chicken w pepperoni-marinara sauce (a Cooking Light recipe), either pasta or hm baguettes

 

Th: cauliflower cheese, baked sweet potatoes, baguettes if we didn't have them on Wednesday

 

F: chicken and wild rice salad (also from Cooking Light)

 

Sa: the girls are making whatever they wish as dh and I are going to a special Sherlock event at the public tv/radio station :D

I plan my weeks starting wed or thurs so I can avoid the saturday rush at whole foods - but I think I already have the following week planned.  I'm still kinda amazed by all you who plan breakfast and dinner.  Breakfast here is cereal with nuts or frozen bagel w pb.  Lunch is leftover or sandwiches.  

 

R -  3 teacup chicken on rice, veggie
F -  sub sandwiches 
St -  pot roast, mashed potatoes
Sn -  hot dogs, biscuits, cold veggies
M - pork chops, baked beans, rice 
T -  tacos 
W - roast chicken, potatoes, vegg

Okay, I am attempting to get back to meal planning (one of my goals/resolutions for 2014!). Here's what I have for this week:

 

Sunday - homemade pizza

Monday - steak, stir-fried broccoli

Tuesday - hot dogs, french fries, carrots, and fruit (kids pick night)

Wednesday - cheeseburger cauliflower, salad

Thursday - pancakes, bacon, fresh fruit

Friday - salsa chicken, salad

I just want to say how impressed I am! You guys have a lot of variety, and seem to cook something new every night. :hurray: I try to cook enough of an entree that we can eat it for two nights (usually not consecutive). We also have a lot of the same dishes over and over: salmon with rice and kale chips, chicken with vegetables, etc. Maybe it is because I have a dd who is dairy free, and we have to limit tomato and gluten products. Dairy, gluten and tomato seem to be part of so many delicious meals!  :drool:

A year ago or so when one of these threads was running, I joined in.  I was really good for 4-5 months than had a busy month of work and then had a baby.  Meal planning has been sporadic since.  So I'm jumping in again.  Here's what I've got for the next two weeks.  Not all of them are actually recipes, just a vague idea of what I want to do and I'll create something on the fly when the time comes.  I just plan suppers because I always cook enough to have leftovers for lunch the next day.

 

Sunday Ravioli

Mon Crockpot Cabbage Rolls

Tues Chicken Fired Rice

Wed Roast Sticky chicken

Thurs Chicken Soup (either chicken noodle or white chicken chili)

Fri Creamy Chicken Couscous Casserole

Sat clean out leftovers

Tues Steak, pesto noodles and green beans

Wed Ham and potato soup

Thurs Chicken and rice casserole

How did I miss this? I love meal planning!

 

I do 2 weeks at a time. I'm about to start the second week. I didn't feel like cooking, so I bought a bunch of premade dinners. Meatloaf and gravy, veggie burgers, spaghetti, and the like. I will be eating a lot of beans and rice and baked potatoes while my family eats the meats.

 

Next week I think I am going to go fully vegan, to detox from all the junk we have been eating. Ugh. Cheese is not my friend.

Now that I know about this thread, I will be back.

Meal Plan for the week:  We are back on LCHF :)  Time to get those pounds off before summer :)

Breakfast:  

  • Sausage or Ham egg and cheese muffin frittatas with onions and peppers --I'm making of 12 each of these for the week for everyone. Yum! 

Lunches:  Will be leftovers from dinners

Sat~No one will be home, I will take "picnic" items to the basketball tournament to avoid nachos and junk

I just made my menu plan for February! Anyone else working on theirs? I'm going to try some new meals this month:

 

- Garlic cheddar chicken

- Easy Mexican Casserole

- Sour-cream pork chops

- Slow cooker pepper steak

 

That's assuming that the meats go on sale! I have a maximum price that I'm willing to pay for my protein source for each type of meat and when it goes on sale- I stock up!

Monday: tostadas (homemade refried beans and tortillas), salad stuff

 

Tuesday: Dijon mustard chicken fricassee (Cooking Light), rice (?), something green

 

Wednesday: Italian wedding soup, homemade baguettes

 

Thursday: garlicky chicken noodle bake (?), something green

 

Friday: samosas, butternut squash soup, naan (all homemade)

 

Saturday: calzones (fillings of choice---various veggies, sausage, ricotta, mozzarella), salad

I'm on my period, which means I HATE menu planning, HATE that I have to menu plan, and i'm not so sure about food in general  :glare:  :cursing:

 

But the show must go on.  Soon, not yet.  My week has been going thursday - to -thursday, but they were out of ground turkey thigh again, so I was one meal short.  I need to go shopping wed and have a plan for 7 or 8 days by then.  wish me luck.

L-pulled pork sandwiches, homemade red cabbage slaw

D-frozen pizza (we are going to meet friends at the mountain at 3, and we won't be home until 6 or so), brussel sprouts

 

Tuesday-

B-scrambled eggs for two, avocado for one

L-chicken salad sandwiches, cabbage salad

D-white bean, chicken, potato and kale soup

 

Wednesday-

B-cereal

L-leftover soup, raw veggies for dipping

D-steak, sweet potatoes, salad

 

Thursday-

B-Greek yogurt with cocoa

L-turkey and cheese sandwiches

D-asiago crusted chicken, steamed veg (not sure which one yet) Caesar salad

 

Friday-

B-scrambled eggs for two, avocado for one

Friday - leftovers

Saturday - usually homemade pizza night, but since Super Bowl is Sunday, need to come up with some other option (we will have pizza while watching Super Bowl)

I'm planning the term this time (12 weeks), freezer cooking and trying to simplify, so I'm going for a two week rotation. 

Thursdays we eat out, and there are a few birthdays and other special days in there, so it works out to 66 days of regular meals.

 

 

Monday: Week 1 Rogan Josh or week 2 Chicken Jalfrezi, precooked and frozen served on rice.  Maybe with Naan bread if I'm extra organised

Tuesday: Week 1 Sweet and Sour Pork or Week 2 Black Bean Beef.  Stir Fry with veg, on rice (S/S Pork) or noodles (BB Beef).  Meat is cut up and frozen, sauce is frozen and ready to cook.

Wednesday: Week 1 Garlic Honey Chicken or week 2 Teriyaki Chicken.  Both served on rice.  GH Chicken with cucumber and carrot fingers, T.Chicken with baby corn, carrot, peppers etc

Thursdays: out

Friday: Week 1: Fish Cakes with salad Week 2 Hawaiian Pork Chops with mashed potatoes and vege.

Saturday and Sunday: weather dependent,  I have ingredients for BBQ (sausages, mince for patties), meat loaf (made from sausages and mince), pizza bases, meat pie options, etc, and a three meals of roast meats.

Ramen Noodle Soup and Japanese cabbage salad

Black Bean and (homemade) salsa soup, churros, veg

Potato Curry and rice

Lentil soup and crumpets

Lentils and spinach, rice

Vegetable quinoa soup, homemade hash browns

Barbecue veggie burger sandwiches and cole slaw

Spinach and leek white bean soup and Greek salad

Thai spiced tofu, stir fry veggies, spring rolls

Bangkok stir fry, rice

Pad Thai and spring rolls

 

Breakfast and lunch:

Cheesy scrambled eggs with herbs

Egg in a hole

Pear French toast

Basic flapjacks

apple-veggie bacon-cheese sandwiches

Assorted beans and rice

Cold cereal and milk

Oatmeal

Orange smoothies

Assorted fruit smoothies

Breakfasts are pretty boring around here. Ds likes scrambled eggs and I usually make dd a couple eggs sunny side up.
