What are you planning for dinners this week?

I'm trying to use up things that have been on the shelves or in the freezer for awhile. Also finally having some success in keeping the monthly grocery total under budget--June and July were crazy! So probably looking at:

 

spaghetti with homemade marinara

grilled chicken and maybe a baked ziti or pasta salad side (lots of pasta here)

red beans and rice with sausage

ebelskivers with bacon, fruit (I make them about once a year, usually August, just for fun)

flank steak, rice, and salad tonight

steak tacos with leftover steak tomorrow night

maybe pad thai? maybe a night out for pizza after soccer practice.

First we are going to work through the huge pan of red lentils, raisins and greens I made this afternoon. Once we are lentil-ed and leftover-ed out we will have:

 

Potato Zucchini Pancakes and applesauce

BBQ Chicken Pizza

Minestrone Soup

Curried squash and carrot soup

Teriyaki Chicken and vegetables

 

Also, we will be eating Rainbow Chard in or with everything all week. I have a ton to use up.

Chicken Broccoli Lo Mein (that was tonight)

Green Pepper Chicken w/rice

Breakfast (probably pancakes/eggs/bacon)

Hamburgers

Red Beans and Rice

BBQ Pineapple Chicken

Baked Nachos

 

I'd kill for some lasagna or pizza. I can't eat tomato sauce while nursing or I get a screaming baby with reflux.

Had to google eberskivers-YUM! Are you Danish?

 

Not Danish, but I am Scandinavian (Norwegian and Swedish). I grew up in CA and visited Solvang, a touristy Danish city near Santa Barbara where I first had ebelskiver. Then around these parts, Junction City OR has a Scandinavian festival every August and they have booths that sell them. I bought an ebelskiver pan from a drug store there and the owners included a recipe. They're very yummy and fun to make, but not exactly health food! Hence the once-a-year schedule.

No set menu here, but it will probably include:

 

Lemon Chicken with rice & veggies {dd has her chicken without sauce}

Spaghetti with hamburger steaks or meatballs

Stoffers Chicken Alfredo {probably will fix this Monday night as we have a long day planned with errands Sunday, Monday and Tuesday. This gives us almost 3 meals, so leftovers are great!}

hot dogs {tomorrow since I didn't cook them today} with Mac & cheese

Fridge cleanout - aka whatever leftovers are in there on Friday when I clean the fridge.

Stuffed shells and salad

 

Black bean enchiladas and maybe just a simple lettuce, tomato, avocado with a sqeeze of lime salad (plain bean and cheese burritos for the kids that don't like enchiladas)

 

Chicken sausage skillet dinner (will include potatoes, spinach, and some other veggies)

 

Broccoli chicken egg noodle casserole

 

Burgers, potato salad, Asian inspired cole slaw, fruit salad

 

And a couple of leftovers/fend for yourself nights

We are moving soon, so I'm trying to use up what we have...hence the weird meals lol.

Last night we had turkey mini hamburgers. No bread.

We have in the freezer-

Hot dogs, chicken nuggets, sweet potato and regular fries, frozen veggies for lunches.

Ground beef and turkey (1 of each), chicken/pineapple/bacon sausage (2 packs), chicken breast (3 meals). Also have a bunch of turkeys and a ham, but I will be giving those away to friends and family.

 

Think I'll do-

Lemon and garlic chicken, buttered pasta with Normandy veg mix

Sausage over rice, steamed broccoli

Beef burritos

Stir fry (using the chicken breasts)

Chili (using the ground turkey)

BBQ chicken...not sure on the sides...

This weeks menu:

 

Sunday:  Tony's New York Pizza and salad

Monday:  top sirloin steak, roasted veggies and salad

Tuesday:  Baked spaghetti w/ salad

Wednesday:  BLT's, macaroni salad, chips

Thursday:  Homemade burgers, baked beans macaroni salad

Friday:  Leftover night

Saturday:Chicken parm, green beans, carrots, salad

Sunday:  Roast w/ carrots, potatoes, salad

Tonight: Thick cut pork loin chops with a spinach nectarine salad and new crop poached pears.

Monday: Swedish Meatballs with peppered noodles, roasted cauliflower

Tuesday: Sauteed shrimp on a warm quinoa salad

Wednesday: Broccoli beef bowls

Thursday: Braised apricot chicken on whole wheat cous cous

Friday: Pasta puttanesca

Saturday: Turkey Burgers, roasted corn and a side green salad

Monday - Ham, risotto, parmesan crisp zucchini and biscuits

 

Tuesday- Taco soup

 

Wednesday -  Baked Ziti with salad and garlic bread

 

Thursday -  BBQ chicken, sweet potatoes and a veggie

 

Friday -  Tonkatsu, cabbage and rice

 

Saturday- attending a pool party/ backyard BBQ

Not super exciting, but ...

 

Spaghetti and meatballs, salad

Costa Rican tilapia with black beans and rice

Pot roast with mashed potatoes and carrots

Baked ziti with sausage

Hotdogs and beans ( not my first choice but we have stuff to use up)

Friday is always pizza night

Saturday something on the grill

Monday: homemade eggrolls, sweet and sour sauce, fried rice

Tuesday: venison stroganoff, carrots

Wednesday: roasted tomato soup, grilled cheese

Thursday: broccoli chicken in crockpot, smashed potatoes

Friday: homemade pizza

Saturday: eggplant parmesan

Tonight: chicken cordon bleu, roasted garlic and herb potatoes, green salad

Monday: Homemade Pizza for DH and boys, soup for me

Tuesday: Spaghetti and salad

Wednesday: Meatloaf, mashed potatoes, zucchini w/ onions and peppers

Thursday: Pork Fried Rice

Friday: club chicken sandwiches, homemade onion rings, salad

Saturday: Meatballs, rolls, green beans

We just got home from the grocery, so here's the plan. It's definitely not a healthy week, nor is it inspired:

 

Chicken Spaghetti (Pioneer Woman), peas, and some kind of fruit or 2nd veggie

Roast, potatoes, carrots, rolls...possibly some roasted brussels sprouts

Shepherd's Pie made with leftovers from the roast, weird as it is, I'm indulging my youngest's request for corn as a side

Potato Soup, grilled cheese, homemade applesauce

Stuffed shells, huge green salad with lots of veggies, Italian herb bread

 

We will have a leftover night and get take out or go for sushi one night, so that wraps up the week. :)

Sunday: was supposed to be carbonara but that seemed too heavy (what was I thinking when I scheduled that in August? It must be a new recipe. We had a pasta salad with 3 strips of thick bacon, broccoli, olive oil, garlic, and aleppo pepper. 

Monday: tacos

Tuesday: pasta faglioli in crockpot, bruchetta, antipasto (probably olives)

Wednesday: baked ranchero eggs

Thursday: baked (grilled?) fish packets, rice, veg

Friday: usually pizza but we'll be traveling

 

Some of these dinners are lighter, but I have pulled pork in the fridge for lunches and snacks.
