My turn for "eat or toss"

Left on my counter overnight:

 

One large sealed package of all natural, no preservatives sliced turkey breast for sandwiches.

 

One package (also sealed) of nitrate free organic bacon.

 

How stupid could I be? These were both high quality meat splurges. I hate to throw them away. I was probably 65 degrees inside.

Toss the turkey. I might keep the bacon. Interestingly, my son biked through Europe a few years ago for 6 months, and he'd buy sandwich meat and keep it overnight in his backpack all the time, finishing it up the next day. He said he didn't know you should never do that!! I can't believe he didn't know that...! It was a practice I held onto staunchly at home, and he helped cook a lot!! In any case, he never got sick, not once... I guess he was lucky. I would never take that chance.

How much would you pay not to stop the symptoms once they had started? ;) That's my answer for myself. For my family, I taste first and wait and see if there is a reaction before they would be allowed to try.

 

The 2 hour rule is a "totally safe" rule. I can certainly remember Thanksgivings as a child when the turkey was eaten around lunchtime, then left out for people to "pick at" until dinner time because there wasn't room in the refrigerator and nobody knew there was anything wrong with it. Meat was thawed all day on the counter. Nobody got sick. On the other hand, there was some risk there and we COULD have gotten sick. We got lucky and didn't. I've also been in a lot of homes of folks from other countries and meat sits out for hours apparently with no ill effects. The wrong bacteria needs to be there in sufficient quantities --it's just a matter of "Is the known risk worth it to you?"
