I'd do Mexican rice and refried beans. We cheat with our refried beans, buy them canned and when heating them add milk, cheese, and if I get fancy sauteed onions and garlic. For toppings, what others have mentioned, but not sure someone mentioned shredded cabbage? We love cabbage on ours.
To keep tortillas warm, line a dish (hopefully it has a lid) with a cloth napkin or two, place tortillas inside and cover with rest of napkin (fold napkin) and lid. Honestly, we use clean kitchen hand towels (they are thicker) but I do that when it's just us :)
