Dinner plans this week

My schedule:

Mon-chicken caesar salad

Tue-quiche and arugula salad

Wed-wild rice and vegetable salad

Thur-turkey burgers, cole slaw, roasted vegetables

Fri-ravioli soup

Sat-grilled chicken, potato salad, some veg

Sun-burgers, corn, cucumber salad

 

It's been a hot week here, so lots of cold salads!!

Tonight: Pasta carbonara (I am not eating this because I'm pretty sure it would kill me, but it satisfies everyone else) and salad

 

Tomorrow: BBQ lentils over polenta, salad if there's some left, if not green beans. Or maybe both.

 

No idea after that. I have ground sausage, bacon, andouille, and chicken in the freezer. I have the ingredients for pizza. We're out of everything else. I'm listening in for ideas.

It's been a hot week here, so lots of cold salads!!

About ravioli soup...it has been 90 degrees and Im sooo in the mood for soup. I thought Id be the only one wanting soup this week.

Listening for ideas.  

 

Whenever it is cool enough I am putting things like enchilada casserole, lasagna, chicken in oven to make enough for more than one dinner if possible.  It can make enough to freeze some too, but reheating it only works well if it won't make the house miserable (we have no A/C).

 

Tonight probably enchilada casserole and watermelon.

Tonight: spaghetti and meatballs

Tomorrow: steak,roasted brussel sprouts, and potatoes

Saturday: roast, carrots, potatoes

Sunday: mac & cheese with sausage and roasted broccoli

Monday: meatloaf, potatoes, carrot sticks

Tuesday: tacos

Wednesday: homemade pizza

Thursday: roasted chicken, rice, and some sort of veggie

Tonight Idk yet. Maybe breakfast for dinner?

Either Friday or Saturday will be chili.

Sunday will be baked potatoes with toppings (incl. chili)

Monday is pizza

Tuesday is greek chicken and tabouli. Maybe pita and hummus if I wake up early.

 

I have 11 bell peppers that need to be used by Saturday (hence the breakfast and chili). I have one open dinner Friday/Saturday still that I'm hoping to use these guys up on. 

 

I feel weird about the potatoes because it is the middle of summer and I associate this with winter. But hey, budgets must be maintained and they were on sale.

I can only tell you what we had in retrospect. What we want to eat in the future is not yet decided.

 

today: salmon in white wine cream sauce, rice, cucumber salad

wed: steak, roasted potato, salad

tue: chicken fajita, guacamole, salsa

mon: pasta, chicken and mushroom cream sauce, stir fried veggies

sun: shakshuka (poached eggs in spicy tomato sauce)

Tonight got messed up so...I had eggs/cherries, dd had leftover chicken, watermelon, salad; ds had eggs/cheese on whole wheat bagels with leftover mashed potatoes, DH had leftover pulled pork

 

Friday - pasta

 

Saturday - Korean chicken, rice, carrots, cherries

 

Sunday - tacos

 

Monday - activities during dinner - dd, ds, and I always have eggs, dh has pizza

 

Tuesday - same as Saturday, but I'll make mashed potatoes instead of the rice

 

Wednesday - pasta

 

Thursday - either smoked sausage or burgers on the grill with starch for the guys and fruit/veggies.

How does one barbeque lentils???

Very carefully, lol.

 

No, it's like barbecue baked beans, but with lentils instead. Or like BBQ pulled pork or beef, but vegetarian-style. And over polenta instead of buns. I do have a recipe to grill the polenta but I doubt I'll get to it.

Oh, so it's basically lentils in bbq sauce? That makes more sense, LOL.

Yes! I bought several bags of lentils when they were $1.00 at Aldi, and now I'm trying to find ways to use them up without tomatoes or tomato sauce. I can only eat so many vegetarian shepherd's pies and tacos.

 

Actually, I might push this meal back to tomorrow's lunch and have DH stick the pan out on the grill, along with the polenta. Hmmm.

On the agenda for the next week:

 

Big salad w/ grilled shrimp

Pasta for kids/riced cauliflower for dh and me w/ vodka sauce

Thai fish soup

Homemade spinach artichoke pizza

Pasta for kids/riced cauliflower for dh and me w/ zucchini and muchrooms

We leave Tue at 6am for a 3 week trip.  I am trying to use things in the fridge and freezer.  

 

We have lots of chicken, so I guess I will eat lots of chicken.  

 

It is only 3 nights, Sun we are going out with friends.

 

Grilled chicken with rice

Baked/Fried chicken with something (not sure yet)

and just need one more EASY dish.

The only idea I have at this point is cheesy chicken rice casserole on the Carnation website.  Last week I made chicken and shrimp fried rice, lasagna (double batch lasted two days and also lunch), chicken wraps.   Maybe I'll get dh to grill some chicken legs.

Chili mac tonight... here are other ideas I have been kicking around... though I am going to modify them to try to eliminate some things...

 

 chicken, potatoes, onion, cream of mushroom, broccoli, Parmesan.
rice (mixed with quinoa?), veggies, cashews
Caesar salad - romaine, spinach?, croutons, hard boiled eggs, chicken, Parmesan,

 

That is what is on my sticky note on my desktop, just copied and pasted!
