Or maybe both. No idea after that. I have ground sausage, bacon, andouille, and chicken in the freezer. I have the ingredients for pizza. We're out of everything else. I'm listening in for ideas. Whenever it is cool enough I am putting things like enchilada casserole, lasagna, chicken in oven to make enough for more than one dinner if possible. It can make enough to freeze some too, but reheating it only works well if it won't make the house miserable (we have no A/C). Tonight probably enchilada casserole and watermelon. Sunday will be baked potatoes with toppings (incl. chili) Monday is pizza Tuesday is greek chicken and tabouli. Maybe pita and hummus if I wake up early. I have 11 bell peppers that need to be used by Saturday (hence the breakfast and chili). I have one open dinner Friday/Saturday still that I'm hoping to use these guys up on. I feel weird about the potatoes because it is the middle of summer and I associate this with winter. But hey, budgets must be maintained and they were on sale. Kassia Posted July 13, 2017 Share Posted July 13, 2017 Tonight got messed up so...I had eggs/cherries, dd had leftover chicken, watermelon, salad; ds had eggs/cheese on whole wheat bagels with leftover mashed potatoes, DH had leftover pulled pork Friday - pasta Saturday - Korean chicken, rice, carrots, cherries Sunday - tacos Monday - activities during dinner - dd, ds, and I always have eggs, dh has pizza Tuesday - same as Saturday, but I'll make mashed potatoes instead of the rice Wednesday - pasta Thursday - either smoked sausage or burgers on the grill with starch for the guys and fruit/veggies. Or like BBQ pulled pork or beef, but vegetarian-style. And over polenta instead of buns. I bought several bags of lentils when they were $1.00 at Aldi, and now I'm trying to find ways to use them up without tomatoes or tomato sauce. I can only eat so many vegetarian shepherd's pies and tacos. Actually, I might push this meal back to tomorrow's lunch and have DH stick the pan out on the grill, along with the polenta. Hmmm. We have lots of chicken, so I guess I will eat lots of chicken. It is only 3 nights, Sun we are going out with friends. Last week I made chicken and shrimp fried rice, lasagna (double batch lasted two days and also lunch), chicken wraps. Maybe I'll get dh to grill some chicken legs.
