I sprinkle bread crumbs on top of mine and then add another layer of extra sharp cheddar. It makes a heavenly crunchy top if you leave it in the oven long enough, or put it under the broiler.

I do something similar - I use panko bread crumbs and mild cheddar (because I like it better) and just bake it long enough so that it's got a nice cheesy crust on top.  It's absolutely the best part of the mac n cheese!  I could just eat that and be so happy.

I do this, too. Also, I have switched from baking my mac n' cheese in a regular 9x13" pan to a rimmed half-sheet (18x13") pan. My family loves that there is twice as much crunchy stuff!

What about letting people choose the toppings?  We had this at a grad party and it was a huge hit. Bacon, green onions, sour cream, salsa, chopped veggies, etc.
