Anyone make THIS salad?

If not, you must! It is delicious!

 

1 broccoli (raw, florets only, cute in small pieces)

1/2 large cauliflower (raw, or whole small, cut like broccoli)

1 medium, diced, purple onion

1 c golden raisins

1 c chopped nuts or sunflower seeds (pecans are my preference)

1 c cooked, crumbled bacon, tempeh bacon, or no bacon (I used none)

 

Dressing:

1 c mayo (I use veganaise)

1/4 c sugar (I use raw sugar and not quite as much)

2 T apple cider vinegar (I use Bragg's)

 

Put all top ingredients in large bowl

Mix dressing ingredients and pour over veggies

Toss

 

DEEEElish! It's easy to make vegan and so flavorful. I don't even LIKE raisins, and I LOVE the contrast of the golden ones with the tangy stuff in this salad.

Yes! One of our favs around here (though I leave out the onion). Actually, my recipe only calls for broccoli not the combo but I substituted it once when the broccoli was very expensive and found out that we really like the mix of cauliflower and broccoli.

I make it. I also add 2 cups of shredded mozzarella. It is 'Scarlett's' salad. Every family dinner and every get together and every covered dish....it is what people want me to make. One friend likes it so much he has renamed it after himself. Like 'Bob Smith' salad.

I've been making this salad almost once a week since you posted it...we love it! Okay, we don't all love it with equal passion, but that is okay because then there is more for me!

Just wanted to let you know that it has become a delicious staple for our family. :)

Do you think it would work with lightly cooked and cooled broccoli? Raw broccoli gives me yucky broccoli burps for hours after I eat it.

It's one of our long-time family favourites, and my opinion is that it would be an entirely different beast with cooked broccoli. Now, it's possible it would be good in its own way, but it would be quite different. You could make a tiny batch to test the theory.

 

My taste buds are telling me that if I attempted a (very lightly) cooked version, I should change some things... lemon juice instead of vinegar, for one. Much less sugar, for another. Probably leave out the raisins. YMMV. :)
