Low carbers--what's for dinner??

Tonight, at my house, we'll be having . . . salad and bunless burgers.   :leaving:    :lol:   But, really, I do try to limit that to once a week.  Tomorrow night will be a hearty beef stew, without any potatoes.  Wednesday night will be Spicy Asian Fish.  Thursday night will be Delicious Apple Glazed Pork Chops.  And Friday night will be Crab Cakes.  All of these recipes are from the site that I linked above.  Some other perennial favorites are the Thai Beef Skillet, Philly Cheeseburger Skillet, Thai Pork Lettuce Wraps, and Artichoke Chicken.

Scrambled Eggs with "stuff" in them (aka veggies like broccoli, mushrooms, peppers) and sausage links.  The non-low carbers are having pancakes on the side.

 

In the last week, we have had:  baked shrimp, reindeer sausage, taco salad and steak as main dishes.  Sides were cauliflower with LC alfredo sauce, grilled veggies, steamed broccoli and LC Baked Beans.

Kroger brand beer brats, simmered in beer with a little onion powder (20-30 min? not sure on time), and then browned with olive oil in a pan.  Sliced on a plate for me, on a bun for the rest of the family if they prefer.  Well, maybe that's for tomorrow but it's my new favorite meal :)

I made a big batch of roasted, stuffed poblano peppers last night. We are having leftovers.

 

My stuffing: grass-fed ground pork cooked seasoned with salt and pepper then cooked, added a can of ro-tel tomatoes, half block cream cheese and a little cheddar. Stuff in the prepared peppers and top with a little more shredded cheese then bake/broil til bubbly.

 

I serve with a small guacamole salad on the side.

Pretty sure I can't get reindeer sausage in Indiana without stalking a fat man in a red suit!

Spinach and beef stew (normally served with rice, but we skip it now):

saute garlic with some cilantro (fresh), add in ground beef (or lamb is better if you have it),season with allspice and seven spices, brown till no longer pink, add 2 pkgs frozen chopped spinach that have been drained. Add a bit of water or broth to make it slightly soupy. (also good when adding some crushed red peppers with the garlic and cilantro)

You can also make something similar with dried mulkhiyya (I don't even know the name in english  :lol: ).

 

Other ideas:

sloppy joe stuffed peppers (make using low sugar ketchup)

I could live on philly steak skillets

sauteed beef tips with onion and mushroom gravy (thicken with a bit of xantham gum instead of corn starch or flour)

I'm not back on full LC yet (next week), but I do make a lot of meals with LC.  Tonight we had parmesan encrusted chicken with a little bit of pasta sauce on top, tomatoes and chopped basil in olive oil and roasted brussel sprouts.  We're NOT LCing it tomorrow though as I'm making squid ink pasta (YUM!), caprese salad and homemade bread.  Those are rare nights, but I have to get this pasta out of the house before I go back on LC, because it is calling my name!  If you've never had it before, it's delicious and has such a beautiful black color.
