Posted February 2, 2012 Share Posted February 2, 2012 Here's a lighter but fast one, great in a pinch: 1 can of cream of chicken 1 can of chicken with rice 1 can of liquid--water works, nonfat milk is very good, if you have any whey use it as part of the liquid and the soup will taste absolutely outstanding! eternalknot Posted February 2, 2012 Share Posted February 2, 2012 Our quickest and easiest? Cut zucchini and squash into bite-sized pieces. Water saute for a few minutes, with or without onions. Add stock and bring to a boil. Serve. My friend adds a dallop of butter atop hers, but we just sprinkle spices. Usually cinnamon. It's easy to add frozen chopped veggies (peas, carrots) when you're adding the stock, for a more complete meal. It's our last-minute, go-to soup. J-rap Posted February 2, 2012 Share Posted February 2, 2012 This is our favorite fast soup: 1 can black beans, rinsed and drained 1 up low sodium chicken broth 1/2 cup salsa 1/2 tsp. cumin Puree everything in a blender, and heat. Serve with a little sour cream and onions. My kids like grated cheddar cheese on top. Also, you'll probably need to double or even triple the recipe so that you have enough. kidsnbooks8 Posted February 2, 2012 Share Posted February 2, 2012 We have been enjoying Campbell's tomato soup and add rice(we like jasmine) black beans and good season's dry italian seasoning packet . We also top with shredded cheddar cheese. I almost always have rice in the fridge, I make a huge pot at some point in the week so we can use it in soup or in wraps. Bring to a boil for 10 minutes or until noodles are done. Voila, soup! I like to add a bit of soy sauce. Not too much, but just enough to give your taste buds a twist.
