Need a gluten and dairy free dessert

But I use sub alternatives such as earth balance,  fake milk, and gluten free flour mix. It doesn't call for much flour like cookies or cake, it isn't super noticeable. It turns out REALLY good. It is VERY LEMONY.

 

I always forget the cinnamon...I am not sure what it tastes like with the cinnamon.

My daughter's been making sorbet recently. It's sooo good. She's made blackberry, chocolate, peach and salted caramel so far. It's made with water instead of milk (like gelato) or cream (like ice cream), but you do need an ice cream maker.

I've made homemade "Larabars" for a friend of mine with multiple sensitivities. Easy to find recipes online...it's basically softened dried fruit (dates/raisins/craisins/) mashed up and mixed with chopped nuts. Yummy, healthy, and something different. You kind of need a food processor, though. 

 

If you have a health food store close by, you could get gluten-free corn flake or rice krispie style cereal and make squares (the ones with marshmallows and margarine...not butter of course).

 

You could also buy "gluten-free oats" and make these "no-bake energy bites", changing the basic recipe to account for allergies. They are so good. My kids love them.

Good luck! It can be hard to figure out recipes when you have friends with allergies/sensitivities.

An ice cream shop near me makes sorbet. Usually they have strong citrus flavors and I get a bit tired of it but they recently had coconut and it was so good!  I would like to try that salted caramel, what recipe does she use?

 

I'm not sure.  The family with allergies is a missionary family from over seas.

No one has yet suggested marshmallow Rice Krispy treats? Then I will! Everyone loves these.

Regular Rice Krispies are not gluten free, and I've heard the GF ones are yucky. I've made them with the Mom's Best Naturals cocoa rice cereal (but this was before I was off dairy, check the box). Waaaaaaay too sweet to make too often. But tasty!

 

King Arthur GF cake mixes are dairy free and yummy.

 

If you do fruit salad, I've made "whipped cream" out of the canned coconut milk before that was actually pretty good, and I don't even like coconut.

 

ETA: If making something with GF oats, make sure they can have oats. I can't even eat those without... well, it's not pretty.

You have to be sure to get the gluten-free type of Rice Krispies, or a similar cereal that is default gluten free. Standard Rice Krispies are not gluten free.

 

I'd go for something boxed and labeled gluten-free (like a cake mix) that required only additions that are gluten-free by default (like eggs) unless I was 100% sure that all my pantry items were gluten-free. So many things that you wouldn't expect contain gluten (like Rice Krispie) - unless you have a good understanding of gluten-free needs, it's safest to err on the side of caution.

It doesn't include salt, but we just sprinkled it on our individual servings/spoonfuls. She said adding it to the recipe might throw the results off because salt melts ice, but she isn't sure on that.
