Melissa in Australia Posted December 29, 2012 Share Posted December 29, 2012 It is summer here and I am overwhelmed with berries.I Have made enough jam to last several years, I have over 20 pies in the freezer, plus several cheesecakes. I Have made berry ice cream topping, and berry cordial. I have frozen over 20 kg of berries. I have run out of recipes. It's been a bumper year. My husband made raspberry muffins with raspberry and mint cream (our mint is also going crazy). That's all I've got. I think I'm with Ms 6 lol. Halftime Hope Posted December 29, 2012 Share Posted December 29, 2012 We wash then and then freeze them on cookie sheets, so they are individually frozen, then bag them in gallon (4L) ziploc freezer bags. That way they are ready for eating or cooking whenever we need them in the off months. I have to buy them though--lucky you! She would use this to make berry milkshakes or to put on ice cream, pancakes, or waffles. She would make the juice from her berries. It's not nutritionally politically correct anymore, though. :ohmy: * Exported from MasterCook * Berry Syrup Recipe By : Serving Size : 1 Preparation Time :0:00 Categories : Sauces & Gravies Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 cups juice 1 cup sugar (1 1/2 c. if raw berries) 1/2 cup light corn syrup Stir and boil 1 minute.
