I don't want to make fruit pie I don't want to make cookies Dinner is ham (Dad makes the BEST ham!), and we usually have the typical side dishes. In other words, nothing "different" or "unique." Erica in OR Posted December 19, 2009 Share Posted December 19, 2009 A friend had a Chocolate Cool Whip Dessert (one recipe is at http://www.cooks.com/rec/view/0,1713,145190-231194,00.html) at the Thanksgiving dinner we went to. It's not necessarily fancy, but I could pretty much eat an entire pan of it. It has a pecan-based crust, then chocolate pudding and Cool Whip/cream cheese layered on top. Mama Anna Posted December 19, 2009 Share Posted December 19, 2009 I don't know if this would be what you're looking for, but it was a hit at Thanksgiving: Fruit Pizza. We used a milk-based pizza crust recipe for the crust (you could use sweetened biscuit dough or even sugar cookie dough), home-made vanilla pudding for the sauce, and canned/dried fruit plus nuts for the toppings. Both generations (ours and the kids') loved it. The topping combo we used was canned peaches, dried cherries, and whole almonds. You could be as creative as you like with choosing and placing the toppings for a Christmassy theme. It's quick, easy and so good. > preheat to 350 and spray 9x13 with non stick cooking spray > Filling Ingredients: > 1-12oz can evaporated milk > 1-16oz can pumpkin (not pie filling) > 4-eggs > 1-t cinnamon > 2-t pumpkin pie spice > 1-t salt > 1 1/2 c sugar > mix all ingredients & pour into pan > > topping: > 1-box yellow cake with pudding > sprinkle dry mix on top of mixture and gently pat it down > 1-c chopped pecans -sprinkle on top and gently pat > 2- sticks melted butter -dribble on top of above > bake for 1 hour > > Icing: > 1-8oz bar cream cream cheese(room temp) > 1-c powdered sugar > 1-8oz tub cool whip > Spread over entire cake: Refrigerate until ready to serve. Toss in a tin of condensed milk and a small tin of milo, about 1 1/2 cups. Mix, mix, then mix in three cups of plain flour and a few bottles of Parissiene essence (brown food colouring. Mix everything up, and turn the heat on under it. Stir until it forms a soft dough, then mix in three or four packets worth of choc ripple biscuit crumbs. I'd stir red and green cherries into the ice-cream before I set it in the bowl. This would depend on how far you are traveling, as you'd have to keep the ice-cream really frozen, then assemble and bake where you are eating dinner. My favorite raspberry trifle recipe is found at http://www.tasteofhome.com/Recipes/Raspberry-Trifle-3 . It is always a hit. Sometimes I add chocolate curls as decor and for flavor. Yum! They have several versions at that site as well. My mom likes it best when I use chocolate pudding instead of the cream. My mom always makes the Kraft Boston Cream Pie. I separate the eggs and whip the whites, and I use one cup of cream for the topping instead of two. Two is just too much. Chopped cherries on the top are very festive for Christmas Eve. It is basically croissants, a vanilla custard, and semi sweet chocolate baked together. 8 large croissants, cut into 1/2 inch cubes 20 ounces of semi sweet chocolate chips 8 cups of whipping cream (there are 8 ounces in 1 cup) 4 teaspoons of vanilla 8 yolks from large eggs (you have to separate the yolks from the whites) 2 cups of sugar Preheat oven to 350. Arrange croissant cubes on large baking sheet and bake until golden brown, about 10 minutes. Spread the chocolate chips over the bottom of the dishes. Top with the croissant cubes. Pour the whipping cream into a pan. Pour in the vanilla. Bring to a simmer over medium heat. Remove from heat. Whisk egg yolks and sugar in medium bowl to blend. Gradually whisk in hot milk mixture.
