Laurie4b Posted January 8, 2016 Share Posted January 8, 2016 Right now, I am drawing a blank on what to have on hand for winter snacks--- except for nuts. In the summer, I eat a lot of fruit. I have big salads for lunch. Fresh veges and hummus or yogurt with frozen blueberries are yummy! Nuts are the one thing I eat in the warm seasons that I also like in the cold. Now, however, I am cold. The boys let the fire die down and it's freezing in here. In addition, I think the general dreariness of winter affects what I want to eat. A piece of cold fresh fruit just doesn't do it for me. So what are your favorite healthy snacks for cold, dreary weather? I need to keep a stock of good snacks that I can grab and eat when hunger strikes, or I know my default will be to head for bread and butter or PB&J, etc. and a lot of it. Whatchagot? One weird thing I eat is I put some shredded mozzarella cheese in a mug and nuke it and then eat it out of the mug with a fork. Posted January 8, 2016 Share Posted January 8, 2016 Popcorn Quick stir-fried spicy veggies Apple, sliced, with "warm" spices and/or honey A hot drink (not a snack) Melted cheese on triscuits "Bolt Calls It Compote" -- 1 bag frozen fruit, 2c water, 3 tbsp minute tapioca powder. Microwave in a large crock or casserole dish until bubbly + 1 min. Cool slightly, sweeten slightly if desired. Eat with a spoon. Makes 5 servings. Blueberries stain. (It's pretty much unsweetened pie filling.) Apple crisp (plenty of oats, not too much sugar) reheated. I don't drink it the rest of the year, but late fall and winter bring on the tea. I like bean soup, but whatever floats your boat. Either have cans of your favorite or make some and freeze it in individual containers. Peanut butter toast on good bread.
