Gentlemommy
A roast, roasted brussel sprouts with bacon bits, roasted sweet potato cubes (not technically super low carb I guess), salad with red wine vinegar and olive oil. happypamama
Roast beef, Lima beans (maybe not the lowest carb), and mashed cauliflower. A salad if anyone feels like making one.
Beebug123
Baked salmon with herbs and butter, steamed broccoli, and I made rice for the rest of the family. Edited March 9, 2016 by Beebug123
Soror
I had pan-fried/sauteed boneless skinless chicken thigh w/ Mrs. Dash and Salt :) and a side salad. Compliments of chef dh since I didn't get home until 8. He cooked it perfectly it was nice and crisp on the outside.

Cinder
Kalua pork with cabbage. This is one of the few new recipes my family has really liked. Reviewers recommended halving the salt, doubling the smoke and steaming the cabbage separately. I incorporated these changes and it turned out great. I also saute onions and sometimes bellpepper on the side. The non-low-carbers like it over rice.

I make a kalua pork in the pressure cooker(instant pot) we LOVE it but I don't like the cabbage with it either, it ends up overcooked for my taste. I like lots of salt so I end up adding more to mine. I serve mine w/ homemade papaya salsa (which may or may not fit into anyone's carb count), it has purple onion, cilantro, lemon juice and some oil.
Cinder
That salsa sounds delicious! I'm going to have to try it--we're only low-carb-ish. ;)

wendy not in HI
I bought a chicken at costco. Salad. Costco rolls for the kids. That's all I got. Thanks for starting this thread - I seriously need the ideas!!
Pegasus
No crust pizza - Layered in ramekin: crumbled cooked sausage, mushrooms, onions, homemade sauce, fresh mozzarella. Pork butt has been on sale here recently. Had a week of lunches consisting of pulled pork (cooked in slow cooker) and coleslaw. Favorite recent supper was a ribeye steak topped with a homemade Parmesan cream sauce along with sauteed mushrooms and oven-roasted asparagus. Mom22ns
Not a low-carber, but out dinner was. Baked fish w/salsa, baked asparagus w/lemon butter, and a salad. We actually had some quinoa with that, but that would mess up its low-carbness.
zoobie
Sautéed chicken cutlets topped with a spoon of Kirkland pesto and a slice of mozzarella and stuck under the broiler. Creamed spinach. A couple of Campari tomatoes wedged up and tossed in a bit of pesto and red wine vinegar. Yum.
