sheryl Posted March 5, 2013 Share Posted March 5, 2013 Well, I'm eating less carbs, but it's VERY HARD! Did I say IT.IS.VERY.HARD!!!!!!!! Avacados are healthy and low carb. I googled for some recipes, but most are guacamole. Do you have anything else to share. Grilled maybe with a splash of olive oil and spices? What else? ETA: I can NOT stand "raw" avocado diced and eaten. So, grilled would be good. I can eat raw if mixed with something or made into guacamole. I put half of an avocado in a fry pan ( skin on) and let it cook for a minute or two. Then scrambled some eggs next to it. Yum. Just search Avocados on Pinterest. Yummy stuff! But when you get to that point, and you're not hungry for breakfast but need something to fill you up for hours, my go-to is this: cut avocado in half, throw away pit, sprinkle each half with garlic salt and eat with a spoon. wapiti Posted March 5, 2013 Share Posted March 5, 2013 My lunch today: put half avocado on a plate. Heat up frying pan. When it gets hot, put 1 tbsp or more of butter in the pan. Toss in a handful of Costco cooked bacon bits, heat for a moment. Crack egg into butter and bacon bits; cook over-easy (or however you like it). Pour egg/butter/bacon bits on top of avocado. It is great as a dip with some chips, bit also great with a spoon ;) 1 can black beans rinsed 2 avacados ( recipe calls for one, less ripe makes a better consistency, more ripe, it is like guacamole with beans) 1/4 ish of a purple onion dived, really just how ever much you want to eat Cilantro, lime juice, garlic salt to taste Quick, easy, yummy! I like half a pita, slices of avocado, lettuce, tomato, hummus, sprouts, cucumber slices. oh yum! great lunch. Add cheese if you like more fat and dairy, I don't so much. Maybe just do a patty and then top with half a slightly fork-mooshed avacado and a bit of salt and pepper. For clarification: fork-mooshed. It's a technical term. You can put it in the food processor to make it smoother but I usually mash it by hand cause it's quicker and less things to clean up. I put one avocado in a bowl. Add unsweetened cocoa power and pure maple syrup (could also do agave nectar). Mash/cream it together and it because a rich, dark chocolate pudding. Sorry for no amount...I kind of eye ball it. It really depends on the size of the avocado and how sweet/chocolately you want it to be. Some people add a little vanilla. You can google it...but it's really so simple and good. I like to buy a can of the good lump crab meat and mix that up with mayo (homemade when I can) and eat that in half an avocado with salt, a little pepper, sometimes a dash of hot sauce mixed into the crab. And a drizzle of melted butter :001_wub: Chopped shrimp in a shrimp salad works great too. I agree with PPs that it is good in omelets. A simple salad with grape tomatoes, chopped avocado, a little lemon or lime juice and EVOO, salt and pepper is yummy too. I use guacamole in lots of things. I am lazy and usually just buy Wholly Guacamole from Costco. I like that mashed up in lieu of mayo in things like deviled eggs. I mash the yolks with guac, then add a little cumin and chili powder, a bit of lime juice if I have it, and stuff the eggs with the filling. It is a nice twist on regular deviled eggs and has lots of good fat :) Thinly sliced over a taco salad with sour cream and or salsa is great. Or with fajitas (slice up some steak with peppers and onions, then top with sour cream and guac or avocado. You could grill it first if you'd like. Half an avocado with the well filled with soy sauce is yummy. Sometimes I sprinkle on toasted sesame seeds or gomaiso. Half an avocado disappears into a smoothie, if you are doing those at this point. It really doesn't taste like anything and it works well to thicken. We call them Cheesy Spicy Avocados Preheat oven to broiling Wash and slice avocado in half, remove seed. Use fork to poke a bazillion holes in each side. Pour lime juice and buffalo sauce over both halves. Cover with cheese. Broil until cheese is starting to brown. (usually 5-10 minutes) Delicious! :) Oh... here's a pic that I took recently.
