Is there a restaurant like this where you live?

There are a few coffee shops locally that I think offer some similar things but I'm not usually out for breakfast and don't drink coffee, so I'm not sure on details. We went to the city last week and had breakfast at a somewhat similar joint, although it was not super upscale. It did have some nice fresh options for breakfast though, which was very nice as most places I've been to offer lots of baked- gluten and sugar filled items for breakfast. They had omelettes w/ all kinds of fresh veggies and such to add in, which was awesome!

http://margueritescatering.com/cafe/ - more of a cafe than a bakery - they serve early dinners and cater, too. Bonus - same parking lot as our library! Really good chicken salad

http://www.kookiekrums.com/ - more of a cookie/gift shop but they do have a small counter for a quick snack - the cookies are beautiful and delicious!

http://www.cappuccinosbakerycafe.com/index.html - more along the lines of what you mentioned - I haven't been here but have passed by it several times - not much parking there - and I usually have kids, so not very convenient. However, after seeing the menu, I'm definitely going now! mmm. Coffeeeee.

First Watch is breakfast & lunch only--7 am - 2:30 pm. While it's not light breakfast & baked goods (they have a full breakfast & lunch menu), it's the only restaurant I've ever seen that is not open for supper (maybe I just haven't gotten around). Their food is good, not cheap for my pocketbook, and they're not a hole in the wall. They have restaurants in 15 states at this point.

ETA: Panera does sound a little bit more like what you described in your OP, except for their hours.

We had one that sounds very similar, and used to go all the time before we moved. It was called Haute Cakes. One thing they started doing that I thought to mention was they carry more gluten-free options now. Many many families in this area are GF (us included) and I know that many families in our new area are as well, and more GF cafe's a d restaurants are opening here all the time. Yay!
