Anyone have a good egg salad recipe to share?

I've got a bunch of eggs to use up and thought egg salad would be a good way to use them up but I've never made it before. Any tips or recipes that you've had good luck with?

I'm pretty simplistic when it comes to egg salad. I hard boil the eggs, chop the whites (I don't make them too small as I like things a bit chunky) and the mush the yolk up and add mayo or miracle whip until it looks good to me. Then I add the egg white chunks a little salt and pepper, maybe some chopped green onion and mix it up.

 

That's it.

I chop up the eggs, mix in mayo, mustard, salt and pepper to taste, and throw it all on some slices of bread. :D Very simple.

 

With the exception of salt, that's what I do. Everyone in my family likes different combinations of mayo and mustard, and even different mustards!, so we all make separate little batches of egg salad :lol:

Boring but good:

 

eggs (cut into variable chunks with two knives)

salt

pepper

a bit of mustard powder, or a squirt of dijon

chopped celery, in 1/4" cubes

mayonnaise to taste (I like just enough to hold it together)

 

Mix, serve warm.

I like it simple.

 

- Hard-boiled eggs, chopped

- finely chopped red onion

- a little lemon juice or some mustard for tang

- good quality *real* mayo (no salad dressing--I use Hellmann's)

- Kosher salt and coarse pepper to taste

 

When I'm in the mood, I might add a little bit of cumin or curry powder. My husband likes crumbled bacon on his egg salad sandwich.

This one is not my very favorite (my favorite is at a local sandwich shop), but it's a knock out every time I serve it:

It turns out I am usually out of green onions when I make it, so I generously sprinkle this http://www.cherchies.com/laledise.html in it (it's dill, lemon, salt, pepper).

 

It is quite delicious when served with a horseradish spread. =)
