Chris in VA
It's a one-pot Mediterranean dish, but I'd like something to accompany it. Crusty bread and....? http://www.paleonewbie.com/one-skillet-paleo-mediterranean-chicken-recipe
Rockhopper
Gazpacho? Salad w/ red wine or lemon vinegarette? Caprese?
SparklyUnicorn
Maybe some sort of salad that has crunch. Something with cucumbers comes to mind.
zoobie
Greek-style salad Some kind of quinoa or rice pilaf
Chris in VA
Hmmm. Any other ideas? Should I serve the salad in a bowl or is it ok on the same plate. I know--dumb question. lol
SamanthaCarter
Garlic green beans? Asparagus? Or nothing but the bread. Maybe just keep it simple.
zoobie
I like salad separately, but I wouldn't think you were a sociopath if you don't mind hot food touching cold lettuce and the sauces mixing. I have issues. ;)
Chris in VA
It's for a "special meal." Dd is having a young man over who wants permission to date her. I think maybe just bread would be fine. But--IDK, maybe something else, too. It's bad enough we are going with a dish we've never had before! lol Yeah. Life on the Edge around here.
zoobie
Separate side salad. Romaine, cucumbers, tomatoes, feta. It will be fine! :grouphug: Baklava gets extra bonus points.
Tanaqui
A nice salad, and also some roasted squash or broccoli or sweet potato.
ashfern
For me there's enough veg in there to not do another on the side, unless you have picky eaters. On the side for this I'd do couscous or quinoa.
SparklyUnicorn
Hmmm. Any other ideas? Should I serve the salad in a bowl or is it ok on the same plate. I know--dumb question. lol Probably I'd serve it separately, but depends on your family. My husband wouldn't care either way. I'm just thinking something contrasting that is crisp and fresh. meena
I would definitely do a side salad, plated (er, bowled) separately. I say this because it gives another choice to your guest. For a special occasion, I would also offer olive oil/balsamic/Italian spices for dipping the bread.
J-rap
Roasted cauliflower. I wouldn't serve a side salad, because it already is a salad.
nd293
Roasted cauliflower. I wouldn't serve a side salad, because it already is a salad. I'd agree - the ingredients of the dish are too salad-like to need a salad. I'd go with bread - get a few types if you want It to be special, perhaps garlic bread, plain bread and a toasted pita bread. But if you do want a salad, fattoush is always good - it's crunch as someone else suggested and simple. And generally delicious, which is always good in food!
ILiveInFlipFlops
We love roasted cauliflower or broccoli here too. Or maybe roasted beets and carrots? Depending on how closely you adhere to paleo guidelines, a caprese or tomato salad might work. Farrar
I wouldn't do anything with it typically. But since it's for a "special" meal, I'd add a starch. I thought couscous sounded right, though I don't know the rules for paleo. I'd probably have done bread as my first choice.
aaplank
How about homemade applesauce? Crusty bread sounds good with it too.
Suzanne in ABQ
How about a cous coup salad or pilaf. You could incorporate sautéed veggies (asparagus, kale or spinach, green onions). Edited May 6, 2016 by Suzanne in ABQ
