Just for Arabic (and other languages--I happen to have Arabic front of mind) there's the Middlebury program, and there is one in California as well. Usually if they offer Arabic, they offer other languages (but not, alas, the reverse). Indiana University has a well-regarded program for 16 languages, from Arabic to Ukrainian. http://www.indiana.edu/~swseel/ FLA funding may be available from the home institution but applications must be in by Feb 1 (see link above). Credit will depend on home university.
