*Inna*
I love my cast iron skillets, but to keep the seasoning even and make them non-stick was a challenge. I found this article where she goes into science of seasoning and spells it out step by step. I didn't strip the pans as I really didn't want the hassle with lye. Just did the six layers (it took a while). The results are great! The skillets are really non-stick, even when I cook the eggs. Just wanted to share if anyone is interested. kitten18
That's the method I've used. I think it originally came from Cook's Ilustrated.
SadieMarie
Thank you. I might give cast iron another try.

cjzimmer1
I might try that if I can find the right oil. My pan is never seasoned well and I haven't figured out how to fix it.
Rosie_0801
I really need a cast iron frying pan and have no idea where to get one! My aunt has heaps. They seem to magically appear in her house. She has special magic auntie skills.
ILiveInFlipFlops
Thank you! I just stripped the dratted seasoning again the other night when I cooked sausage in my skillet. I've been fighting with that thing for four years now. You've given me a glimmer of hope
FriedClams
I used that one, too. My most used pan is still kind of annoying, but the method rocks. ETA - stripping with the vinegar worked great for me. Might just be for rust. I can't remember.
Susan in TN
Thank you. I might give cast iron another try. I abandoned cast iron because of the egg issue, but if this really works I may give it another go myself.
skimomma
I must be clueless. I have never seasoned my cast iron. Some was used and some was "pre-seasoned." I cook everything from eggs to stir fry with no sticking.
xixstar
I read tht and wanted to strip all my pans and start over --- still kinda want to, actually. But I can cook eggs with no issues in my cast iron by dh or dd tries and they burn egg all over the pan - I have no clue the difference other than I assume that I use higher eat and nice coating of fat/oil and maybe they don't. Really want to reseason my pans, mostly the sides that don't have a perfectly smooth finish like I would like.... but they get the job done -- I just need a much bigger cast iron pan.
