Healthy, homemade snack bars?

We've just had a major change in income (downward) and my 4 sons tend to like cereal bars/energy bars--whatever you want to call them--for something quick to grab on the way to class, but they are expensive. Do any of you make these kinds of quick -grab bars at home? There are no food allergies here.

I make granola bars with some frequency.  This recipe never lets me down: http://www.foodnetwork.com/recipes/ina-garten/homemade-granola-bars-recipe.html  I just change the dried fruit to suit my needs.  I also eliminate the added sugar.  The dried fruit and honey makes them plenty sweet.

Alton Brown has a "power bar" type recipe that's good. His granola bar recipe is good too. I usually combine a few recipes with whatever random bits of stuff I have on hand.

Someone else posted about the Bosch cookbook energy bars maybe a year or so ago and our modified version of that has become a family favorite. Here's the basic recipe: http://bushnellgrapevine.blogspot.com/2009/02/breakfast-energy-bars-from-bosch.html

 

Our changes:

3/4 c. brown sugar instead of 1 cup

1 t. vanilla instead of 1/2 t.

2 c. rice krispies instead of 1.5 cups

3/4 c. chocolate chips instead of 1 cup (and we omit the seeds, raisins, coconut because we have less exotic preferences!)

COOK FOR ONLY 16 MINUTES INSTEAD OF 22! Ours are perfectly done at 16 minutes and would be extremely hard and crunchy at 22.

 

This makes a cookie sheet of bars which I cut into 24 bars (divide by 6 on the short side and 4 on the long side of the cookie sheet). I stack them in a gallon ziploc bag and put them in the freezer. Lasts us about a week.

I made this recipe for oatmeal bars for ds. They are pretty sweet, you could easily cut down the sugar if you prefer. I'm currently working on a recipe for LCHF almond meal bars for me, but it's not there yet.

 

Oatmeal bars

Base:
4 cups quick cook oats
1 cup brown sugar, not packed
1 ½ sticks butter, melted
1 cup cinnamon applesauce (can use plain applesauce or any jam instead to vary the flavor)
2 eggs, beaten

Add-ins (can be varied to suit your taste):
1 cup coconut flakes
½ cup chopped pecans
½ cup dried blueberries, plumped

Preheat oven to 350. Mix all ingredients in a large bowl. Pack tightly into a greased pan, about 1 inch deep. Bake 30 minutes or until top is golden brown.

I made a gluten/dairy free version using Barbara's Rice Crisp cereal, Udi's GF granola,  and Justin's Chocolate Hazelnut butter (a great alternative for those who can't have Nutella because of dairy!). I didn't have any dried fruit to add and they were still very good!

Thanks! I just made the first recipe. Can't wait for the kids to try them tomorrow. 

 

I may have to try out everyones recipes!
