MAIMOM
I am hoping someone here has a recipe for baked oatmeal. I attended a womens retreat a few years back. They served baked oatmeat with a number of toppings we could add to our slice. It was heavenly. I am so sorry I did not get the recipe. I believe they used regular oats, cooked them first then baked them but I wonder if they added anything. Thanks for you help.

skimerinkydo
Here is mine: It's sort of a guideline. I make it with whatever I happen to have on hand. Preheat oven to 350 degrees -Combine dry ingredients in bowl: 3 cups Old Fashioned Oats (not the quick or instant kind) ½ cup Brown Sugar 2 teaspoons Baking Powder ½ teaspoon Salt 1 or 2 teaspoons cinnamon or nutmeg (optional) -In a large glass bowl melt ¼ cup butter -Whisk in: 2 eggs 1 ¼ cup milk 1 or 2 teaspoons vanilla -Add oat mixture. Let stand five minutes. -Stir in your flavor choice of flavors: 2 to 2 1/2 cups wet fruit (such as apples, peaches, blueberries, or pears or a combination of those) 1 cup dry fruit (raisins, dates or dried cranberries) ½ to 1 cup walnuts -Pour into greased 9x13 baking dish. Bake at 350 degrees for 35-40 minutes or utnil top is lightly browned and se in the middle. - You can bake this the night before and reheat each piece in the morning. Flavor combinations: *Apple-cranberry-Walnut-cinnamon Apple-raisin-walnut-cinnamon Peach-blueberry 1 cup orange flavored dried cranberries – ½ cup coconut

Rebecca
We make this one. We substitute orange juice for the milk and oil for the butter. We serve it with fresh sliced fruit. We have also baked it with sliced strawberries layered across the top.

We have gone off of dairy and almond milk sometimes changes the texture....specifically of jiffy corn bread :001_smile:

Miss Peregrine
How do you reheat leftovers? Just nuke in the microwave or does that make it soggy? We throw it back in the oven( no microwave) or they eat it cold, cut into squares.

MAIMOM
How do you reheat leftovers? Just nuke in the microwave or does that make it soggy? I do heat it in the microwave. I add some butter, brown sugar, cinnamon and almond milk, warm it in the microwave. I take it out add some more milk as I stir and then top with raisins, cranberry and walnuts. MAIMOM
I made this one too. It was easy and quick. I cut it into squares and put it in the fridge to be heated and eaten over the next few days. We finished the last of it this morning. Thanks for the idea. It was wonderful. Now on to try some others. Pumpkin sounds yummy and interesting.
