Parrothead Posted September 19, 2012 Share Posted September 19, 2012 Thoroughly mix together then shape into a loaf: 2 pounds ground meat (any combination of beef, pork, or lamb) 3/4 cup rolled oats 1 small onion chopped 1/2 a bell pepper, chopped cove of minced garlic 1/2 cup ketchup 1 egg Bake in oven at 350 for about 45 minutes or in crockpot for 4 hours on low. To feed my family though I start with 3# of ground chuck, 2 eggs, a cup or two (??) of oats (since we're gluten free now...otherwise I would use saltine crackers, half a sleeve maybe?), some salt, pepper, garlic powder, at least 1/4 cup of worcestershire sauce and...no idea how much ketchup...1 cup? Occasionally I'll finely dice half an onion and throw that in there. But that really is rather rare. Some of my family likes ketchup on top, some do not, some prefer bbq. QueenCat Posted September 19, 2012 Share Posted September 19, 2012 2 lbs ground beef (93% lean) 1/2 cup rolled oats 1/2 cup whole wheat bread crumbs 1/2 cup shredded carrots (buy pre-shredded) 1 onion, chopped and caramelized 2 garlic cloves 1 egg 1/2 cup tomato sauce or barbecue sauce Mix all in kitchen aid. Bake in loaf pan on 350F for 45 minutes. Change to broil for 3-5 minutes. If I have some cheese already shredded, I will add it to the mix if I'm using the tomato sauce. But the basics are: 2-3 lbs. ground beef, or other ground meat 1 small onion, diced and sautéed 2 eggs gluten free bread crumbs or leftover rice salt & pepper any spices that smell good to me that day Sometimes I add extras like finely ground carrots, tomatoes, spinach or other vegetables- I pulverize them in the food processor to make them blend in with the meat. Mash it all together and form a loaf in a baking dish. I like ketchup or tomato sauce on mine, so I pour some on top and bake it at 350 until it's done. I use: 2 lb ground beef 2 eggs crushed Chex ~2 tsp Worcestershire sauce 6 oz tomato paste pureed white onion 6ish frozen veggie cubes (homemade and the size of an ice cube) salt pepper After mixed together and put in a pan it cooks at 350 degrees for about 75 minutes (I start checking at 1 hour). I do half ground turkey breast and half regular ground turkey. Shawna in Texas Posted September 20, 2012 Share Posted September 20, 2012 2 lbs. hamburger (not the leanest, I think I buy the 80/20 or 85/15) caramelized onion a bunch of roasted garlic, I use a whole bulb salt, pepper Italian bread crumbs 2 eggs balsamic vinegar (a lot) catsup mozzarella (I get the ones in the deli seasoned and shaped like marbles) Mix all that thoroughly and shape into the pan and tuck in any visible mozzarella balls. In a bowl, mix more balsamic and catsup. Add enough balsamic to substantially darken and thin the catsup. Put over the meatloaf. Back on 350-375 for about 45 minutes or so. Here is the way we like it best. 1.5 lbs of ground beef 1 can cream of mushroom soup 3 eggs 3/4c oatmeal pepper 1 onion chopped optional: 1 green pepper chopped or grated carrots. Mix together and bake at 350 degrees for approx one hour or until brown. The other recipe that we like is 1pkt lipton onion soup 1/2 to 3/4 cup bread crumbs 1/2 cup hot water pepper 1.5lbs of ground beef 3 eggs 1/2 to 1 cup shredded carrots mix the first 4 ingredients together and let set 10 minutes. Add the pepper ground beef and eggs (carrrots if you like them). Top with ketchup and brown sugar (mix to taste approx 2:1 ratio). bake at 350 for an hour. This recipe is great with the carrots added. The ketchup and brown sugar really give the meatloaf good flavor. I have used the splenda brown sugar blend for this and it works well. It's called "German style." 1 1/2 lb lean ground meat (turkey works fine) 1 cup skim milk 2 egg whites 2 tb packed brown sugar 2 tb spicy brown mustard 1 tsp onion salt 1/2 cup dry breadcrumbs Mix all ingredients well; spread mixture of additional mustard and brown sugar over top if desired; bake in 350 oven for 1h.
