Amber and I travel in the same circles and she's always got something green, healthy and delicious at at potluck. The kale and carrot salad is really good, and perfect for hot wether. Debbie in OR Posted July 18, 2012 Share Posted July 18, 2012 Olive Garden's Zuppa Toscana 1 lb Italian sausage 2 large russet baking potatoes, sliced in half, and then in 1/4 inch slice 1/4 cup bacon bit (optional) 2 garlic cloves, minced 2 cups kale, chopped 2 (8 ounce) cans chicken broth 1 quart water 1 cup heavy whipping cream Directions: 1 Chop or slice uncooked sausage into small pieces. 2 Brown sausage in your soup pot. 3 Add chicken broth and water to pot and stir. 4 Place onions, potatoes, and garlic in pot. 5 Cook on medium heat until potatoes are done. 6 Add sausage and bacon. 7 Salt and pepper to taste. 8 Simmer for another 10 minutes. 9 Turn to low heat. 10 Add kale and cream Quote Link to comment Share on other sites More sharing options...
Joker Posted July 18, 2012 Share Posted July 18, 2012 I actually don't do anything with it. I tried kale chips once but the whole house ended up smelling like burned broccoli. I just wash it, tear it into edible size pieces, and put it in a salad. My oldest will eat whole leaves wrapped around bell peppers and cheese. :tongue_smilie: I can't do that, but I can take it in a salad with other lettuce and with dressing. acurtis75 Posted July 18, 2012 Share Posted July 18, 2012 I juice Kale and put it in smoothies but our favorite way to eat it is green eggs. We put Kale (or spinach) in the blender with eggs and then scramble them. Sometimes we add a little cheese or put the eggs on toast with cheese dor a sandwich.
