Time for a Pantry Challenge----canned pork and canned apricots

I cleaned out my pantry cupboard today and found 2 cans of pork (the government issue cans my disabled son got) and several cans of apricots.  What do I do with these?  The kids wont eat apricots alone but what about an apricot chicken???  No idea what to do with the pork as we are not pork eaters (other than ham and bacon :-) )

 

Feel free to give me ideas and join in with your challenging items.

Unless, it could be important right now that you find a way to eat anything/everything you have access to... But if you are just cleaning out your pantry, there's a reason you haven't chosen yet to eat those things, and they are certainly not health foods. I'd send them on.

I wonder if you could crisp up the pork carnitas-style? Either in a hot iron skillet or under the broiler. Make tacos. Or drown it in enchilada type sauce? I have never had canned pork, so I'm imagining it as sort of a soft pulled pork texture.

 

Apricots into ice cream or pancake/waffle/French toast topping?

Canned pork actually makes a fairly decent pulled pork BBQ.  Just warm it up with some decent BBQ sauce.  (I've actually eaten the government issue stuff.  It looks horrid right out of the can, but actually looks edible once it is heated up.)

 

The apricots could make a decent sauce for chicken or pork chops.  I would finely mince it or puree it and make an asian style sauce.  

Or make an apricot cake.

I have know idea what to do with the pork as I've never seen such a thing. The apricots I would probably cook up and make some kind of fruit bar or dessert with.  Something like this. These all call for jam, but I would just add some cornstarch and thicken them up and call it good.

The pork I have no idea, but I like The Girls' Mom's idea of BBQ sauce.  I'd pop it in a crock pot with BBQ sauce and then serve it on buns with coleslaw if your family like coleslaw.

 

For apricots, apricot chicken sounds good.  You cold also make apricot muffins or something sweet out of them.  What about apricot cobbler? http://www.food.com/recipe/wonderful-apricot-cobbler-77359

Pulled pork with BBQ sauce sounds quite doable. Thanks for the tips of rinsing it well.

 

I will work on some apricot cakes, chicken, etc.

 

We certainly won't starve if we didn't eat these items but since they are there, I want to try to use them up.
