Homemade Rolls to Feed a Crowd?

My mom and aunt have a wonderful roll recipe, but the past few years their rolls didn't turn out for Thanksgiving so last year we had store bought rolls. I would love to have homemade rolls for Thanksgiving this year, but since their recipe is quite time intensive, I am looking for an easier recipe to try. We will have between 25 - 30 people for dinner and if the rolls are good, I will need to have at least two for each person.

 

Anyone have a recipe that is yummy but not too difficult?

 

One that works ever tine is helpful as well.

Teen Club Rolls

Ingredients:

1 ½ qt milk

1 ½ cups butter or margarine (melted)

1 ½ cups sugar

1/3 cup salt

½ cup yeast

3 cups warm water

7 ¼ lb flour

 

Directions:

  1. Combine 1st 4 ingredients. 
  2. In a separate bowl, slowly add yeast to water, stirring constantly in one direction until it is dissolved.  Add this to the milk mixture. 
  3. Add the flour and stir until mixed. 
  4. Place dough on board and knead about 10 minutes. 
  5. Place in a greased bowl and cover with plastic wrap. 
  6. Let rise in a warm place until doubled (approx. 1 ½ hours). 
  7. Punch down and knead and let rise again (approx. ½ hour). 
  8. Punch down and make into rolls:
    1. Cut off  1/3 C pieces
    2. Fold the sides of each piece over until the edges are all stretched around to the bottom and the top is smooth
    3. Dip in melted butter
    4. Place in greased roasting pans bottom down
  9. Let rise again before baking.
  10. Bake at 350 degrees for about 45 minutes. 

 

1 batch will fill 3 roasting pans 9x15 = 4x6 rows

Have you made bread before? Make your favorite white (or wheat) recipe, rise, split into rolls, rise, bake, and freeze. When you're ready to go heat them up on a cookie sheet in the oven for 5-10m. 

 

If you're in too much of a hurry there is bread dough in the freezer section of the grocery store. Usually it's heat and bake. It comes in rolls portions too.

This is almost the same bread recipe I make and it turns out wonderfully each time. I like to do the second rise in the fridge whenever possible, and I have frozen the dough and had it turn out well when thawed.

This sounds like the one I make every year...........for 35 years now.  Easy and delicious.  If I make them early in the week of Thanksgiving I have to make a double batch or there won't be enough left for Thanksgiving dinner!

 

One batch makes 32 rolls ( 2 circles of 16).    Often I make them ahead of time and hide them in the freezer.  They are still delicious.
