What's for dinner this week?

Recommended Posts

We do the Fresh20, so that covers Tuesday - Saturday.

 

Monday: supposed to be our night out, but one child sick. TBD.

Tuesday: Chicken Dijon with peppered egg noodles

Wednesday: Ginger shrimp lettuce wraps with spicy peanut sauce

Thursday: Chicken Fajita Burritos

Friday: Turkey & black bean chili with quesadillas

Saturday: Edamame rice noodle salad with creamy peanut dressing

Sunday: boneless leg of lamb, stuffed with herbs and braised in red wine with TBD veggie sides

Here's this week's menu

 

Sun: Stouffer's Lasagne (for some reason my kids prefer this to homemade so I save it for days when I'm too busy/tired to cook)

Mon: Salmon patties, colcannon

Tues: Basil chicken in coconut curry sauce over basmati rice

Wed: Tacos

Thurs: Shepherd's pie

Fri: homemade pizza

Sat: leftovers

My kiddos snub most casseroles and apparently that includes lasagne...though they love spaghetti, which makes no sense to me!

I have some meals planned for the next few days:

 

turkey meatloaf, mashed potatoes, and salad

breakfast for dinner (probably pancakes, sausage, and applesauce)

Three Teacup Chicken with rice and some kind of vegetable

shrimp with artichokes over pasta, garlic parmesan bread

Chicken was on sale this week so the week is chicken heavy. We don't usually eat this much chicken.

 

Tonight- Chicken francese (chicken dipped in egg, lemon juice, parsley, garlic then rolled in parmesan cheese) served with angel hair pasta

Tomorrow - Our homemade version of Chipotle bowls with chicken

Wednesday - home late after girl scouts so it is sloppy joes kept warm in crockpot

Thursday - roasted chicken, baked potatoes and some sort of veggie

Friday - hubby and I are going out for dinner since girls will be spending weekend with my Mom.

weekend will be scrounging for whatever is available in house since girls won't be home and I work 12 hour shifts on weekends.

Monday: Spinach and ricotta cannelloni with a mixed greens salad

Tuesday: Prime rib roast, roasted parsnips, carrots and beets, yorkshire puddings and gravy, and a green salad (It's dh's b-day).

Wednesday: Cheese and fruit tray, roasted butternut squash soup, spinach salad

Thursday: Ginger beef and bok choy with vegetable fried rice

Friday: (A new dish that I'm going to recreate from something I had in a restaurant) Maple Pecan Crusted chicken with brie over salad of spinach, maple pecans, dried cherries, red onion, and slivered green apple and carrot, with maple vinaigrette

Saturday: Ds is cooking and he hasn't decided yet.

Sunday: Either northern bean soup or pea soup. Either way, it's getting some fresh smoked ham hock in it.
