Through an error on my part, I now have 3 1/2 gallons in addition to what we'll drink over the next seven days (6 1/2 gallons total). I plan to make a few batches of ice cream, but they take only 1 cup of milk each and my freezer can only hold so much ice cream :tongue_smilie: I tried to make homemade pudding yesterday, but it didn't come out very well. I'm not sure what I did wrong. None of us is big fans of homemade yogurt & I don't have any keifer grains right now. ETA: Here's a chocolate pudding recipe that tastes just like those great cooked pudding mixes. I've frozen milk (make sure this is room in the bottle for expansion), and it was a little different once I took it out, but nothing bad. Just different. It is not a super sweet pudding though if that's what the kids prefer. I also agree with the suggestion that it would be a good time to try cheese making. I know about extra milk:D My suggestion would be to freeze it. It will thaw out with some flakes in it, because of how the cream reacts to being frozen, but it will be fine. I used to freeze lots of milk to have during our cows' dry seasons. I once had about 95 gallons of frozen mik in my freezers!! lol You can also make extra icecream and freeze it up. WishboneDawn Posted September 20, 2011 Share Posted September 20, 2011 Here's a ricotta guide. It's easy because it's not a true cheese. You're simply adding heat and vinegar to separate the curds.
