Alice
Sure, sounds like the beginnings of a chicken stew to me. Maybe cut up all the chicken, add the veggies and some broth and white beans.
Anne in CA
I would do an Italian style soup. I would brown the chicken pieces in a little olive oil, brown the onion and carrots in the olive oil too, then put it in the crock pot with lots of Italian seasoning and the squashes and some chopped garlic or garlic powder.
IfIOnly
This is a pork recipe crock-pot but works with chicken too. http://addapinch.com/cooking/honey-soy-pork-tenderloin-recipe/ It's really flavorful. My family goes nuts for it! Added ingredients are: ¼ cup olive oil ¼ cup soy sauce ½ cup honey 3 tablespoons Montreal Steak Seasoning 2 cloves minced garlic or ½ teaspoon garlic powder pinch ground ginger pinch red pepper flakes (optional for heat) Edited November 19, 2015 by LavenderGirl

Athome
Google Southern Living's Lemon, Garlic, Rosemary Chicken with red potatoes. Yummy! A family favorite for us. We also use boneless ones to make great Chinese food (Cooks Illustrated Chinese Chicken Lettuce Wraps).
Ausmumof3
Minestrone. You will need some tomatoes or passata and soup pasta, yum.
